Pancakes or Waffles?

Happy Biggest Loser day all!!  I think that I actually LOVE waffles more than pancakes and even though you use the same batter to make either, waffles taste better.  I have been wanting waffles for awhile now but there is only one little hang-up ~ my waffle iron died…..

Enter Kashi’s new 7-Grain Waffles….

Topped with a Morning Star Veggie Sausage (2 points+) and 1 Tbsp of Pure Maple Syrup (1 points+).

One delicious wafflewich.  The only thing that might be better ~ a MAPLE BACON WAFFLEWICH…..I might just have to make that one tomorrow!

I had planned on building a salad today but today I knew I was too hungry to have just salad.  Instead, I participated in our pick your own enchilada special at the Cafe!

2 Chicken Enchiladas for 11 points+

I LOVE that they used chipotles in their enchilada sauce and packed them full of chicken over cheese…

Topped with mounds of pico de gallo and corn!

The black beans had a bunch of veggies ~ what a fantastic idea for “bulking” them up.

1/2 cup = 2 points+

1/2 cup Spanish rice = 3 points+

On my way home, he messaged me asking how he could help prepare dinner. 

I told him we were going to have grilled shrimp skewers with brown rice and cucumber salad for dinner.

He then replied saying we only had 30 shrimp and were 18 shrimp shy of a full 1 lb so he was going to pick a few other things to go with them….just a few Winking smile

I LOVE these Aidells Chicken Meatballs because they are an excellent grab and go option for snacks and/or meals.

Decent ingredient list….

1 points+ each even when you have 3!

These “balls” are totally moist, slightly sweet from the teriyaki with hints of pineapple and black pepper.  They are delicious served on the side, in lettuce cups, on skewers, in soups….the list goes on….I bought them at Costco (3 points+)

Did you know you can actually have 2 oz of shrimp for only 1 points+?  That would be about 1-2 Ginger Sesame Teriyaki Shrimp Skewers depending on the side of your shrimp (DEAL!)

We made our own teriyaki sauce (not really sure why because we have some in the fridge)

  • 1/2 cup Mirin Japanese Wine
  • 1/4 cup agave nectar
  • 1/4 cup soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp fresh ginger, grated
  • Dash of sriracha

I wish I had saved some of the sauce to put on my 1/2 cup sesame brown rice (3 points+) because it was so good LOL.

Instead, I used the dressing from our sesame cucumber salad (topped with rice vinegar, sesame oil, agave, sesame seeds, sea salt & black pepper).

Light, healthy and packed with flavor for only 8 points+.

I am LOVING The Halloween theme on BL, but, I cannot believe they showed people smooching on Biggest Loser!!! I LOVE that they are showing who is in a relationship because we are always guessing LOL……Off to snack on some watermelon and hope Bonnie gets voted off tonight Open-mouthed smile

    Your dinner looks delicious!

    I for one hate both waffles and pancakes mainly due to the doughy bready texture. They also don’t taste good to me. I remember back when I was a little girl putting peanut butter all over frozen waffles and loving it! Just goes to show you, peanut butter makes everything good. ^_^

    I personally love pancakes now that my MIL told me how to make them “correctly.” Pardon me if I am the only person who was taught to cook theirs in butter or oil. MIL used to work in several truck stops (lol) and she informed me you are to cook them on a hot griddle plain – no oil, butter…. NADA. You have to wait until the water droplets literally “dance” across the nonstick griddle before starting, but I love my pancakes since she told me this. And I don’t feel nearly as guilty for eating them after cutting out all the extra calories/fat in the frying process!!

    Ok, the wafflewich is too good of an idea. I must do that with my fave – bacon. 🙂

    Waffles for me hands down. I love a visit to Waffle House too! Yum. Don’t care for pancakes, they seem to be just flour and water. Get well soon!

    WAFFLES!!

    Never liked pancakes. I don’t cook them. My daughter loves pancakes.
    Thank goodness my Mom taught my daughter how to make pancakes, because she would be out of luck. 🙂

    Wow that dinner looks so amazing. I am going to have to do something similar to that now. OF COURSE with your home made teriyaki sauce. That sounds yummy. I love shrimp so the DH will have to grill some up for me on a skewer. Kabob stuff is my fav.

    Waffles all the way. I bought the pumpkin waffle/pancake mix from Trader Joe’s that you have mentioned before so I am eager to try it. Time to haul out my Belgian waffle maker – yum.

    I was never really fond of either pancakes or waffles until I tried the Protein Pancake the girls on the Fire Lites Fire blog eat. The pancake is made with oatmeal, cottage cheese, egg beaters, baking soda, and cinnamon and is very satisfying and filling.

    Shut UP… I totally bought some gluten-free frozen waffles the other day with the intent of making some PB/waffle sandwiches and some sausage/waffle sandwiches… might have to make a PB/bacon/waffle sandwich… especially since I have some Mighty Maple PB at the house, omg!! 🙂

    I don’t know if I love waffles or pancakes more, they are both equally delicious!!! I do love how waffles hold up better with heartier toppings 🙂
    OOOOO, I am excited about my next Costco trip so I can get some chicken meatballs. Love the P stats for them!

    I’m on a gluten free diet. I use Pamela’s pancake mix to make waffles or pancakes. I think it’s a visual thing but I’m more satisfied with one section of waffle then 3 small pancakes for the same amount of points. Go figure.

    BTW, I like the recipe you have for the protein pancake. I use gluten free oats. It nice to have for a bit of variety.

    I’ll have to keep my eyes peeled for those chicken meatballs the next time I’m at Costco! Have you tried any other flavors? They seem like a great switch from the Armour meatballs which my Dad loves… full of caramel color and not so real ingredients! I happen to love the TJ’s Meatless Meatballs, but I know he’d never touch those 😉

      I have not tried the other flavors from Costco, but, I do LOVE the Trader Joe’s Spicy Buffalo and Sun Dried Tomato/Basil Chicken Meatballs if that helps LOL. I NEED to try the others because we love these.

    I love waffles more than pancakes. I wanna get the TJ’s pumpkin pancake and waffle mix to make some waffles. I did make some pumpkin protein pancakes this week and they were yummy!!

    Danica, I was just looking at those meatballs at Sam’s Club this weekend and decided to pass them by. Now that they have your recommendation, I’ll definitely pick them up next week!

    And regarding Biggest Loser – I’m with you on Bonnie! Of course, we really don’t know the people but I just get the feeling that she could walk and move better and enjoys the attention she gets for all the “suffering.” The constant bursting into tears over EVERYTHING urks me. We need a separate blog thread just for Biggest Loser!!
