Pasta with Kale, Sausage & Cheese

Hi all! How was your Tuesday? My work day was ok but my eats and workout were awesome. I totally owe my Fitbit buddy for motivating this morning to get to the gym. I was too tired to get up early, it’s a rainy day and I thought about skipping it. She invited me to a goal day chalkenge and that was the push I needed.

Breakfast repeats – Healthy Eggrolls (3 sp) and half an orange.I did a 30 minute walk/jog on the treadmill – it was tough, my lungs burned, but, I felt so proud and energized all day.

Post workout, I had this delicious Carne Asada Frito salad.

Salad base – mixed greens, broccoli spaw, cherry tomatoes, green onion, cilantro and 1/2 oz Trader Joe’s Lite Mexican Cheese.Plus 2 oz Bill Bailey’s Carne Asada for protein power.Topped with crunch and spice – 1 package chili cheese Fritos and hot sauce for dressing.

Crunchy, salty, sweet, spicy and fresh – all for 8 Smartpoints.I was still hungry so I added the other 1/2 oz cheese and hot sauce to 1/2 cup Rosarita fat free green chili lime refried beans.

Not pretty but super tasty in a pintos plus cheese way and only 1 WWFreestyle Smartpoint.Tonight’s dinner was so amazing and took only 20 minutes to make. Meaning you all need to add this to your must make list.

I pretty much followed this Weight Watchers recipe for Rigatoni with Kale & Sausage.

While the pasta water heats to a boil, brown 2 Jennie-O Hot Italian Turkey Sausage Links (casings removed). Add 5 cups roughly chopped Kale (I bought a big precut bag to save time cutting) and wilt into the sausage.  Stir in 1 cup chicken broth, salt and pepper. Reduce heat to low, cover for 9 minutes and drop your pasta in the boiling water in the other pasta.Add the cooked pasta to the sausage kale mix.Stir together and top with a little crushed red pepper flakes and parmesan.

You get 1/4 of the pan for a serving!The spicy sausage flavors the entire dish along with the parmesan making every bite delicious. Seriously – The Husband actually ate all his kale instead of picking it out and ate the other 3 servings lol.

Is it wierd that I have 3 Smartpoints left, but, what I really want for dessert is a banana??
