Hi all! How was your Wednesday? My day started out great with a 34 minute C25K jog/walk and ended with one hearty, cheesy, doughy pasta that sticks to your ribs.
A good day indeed!
I was rushing out the door this morning so my eggwich was taken on the fly.
1 slice Nature’s Own Butter Bread topped with 1/2 Tbsp whipped butter, a fried egg and tomato slices. Cut in half for a double decker sandwich for only 3 WWFreestyle Smartpoints.Late morning snack as I knew our business lunch would be later at 1 pm. (6 hours after breakfast).
Banana and mini Jarlsberg Swiss cheese (2 sp).We had lunch at Bistro 33 and I ordered the grilled lemon chicken salad with the lemon vinaigrette on the side. This salad had so many fun things to eat. (10 sp).
Dinner tonight was a recipe that The Husband picked out after seeing the picture this weekend. Below is my healthy spin on this Philly Cheese steak Gnocchi recipe.
This recipe comes together quickly so I recommend prepping everything before you start cooking.Heat a large non-stick skillet over medium heat. Add 1 lb 93% lean ground beef and cook with garlic, jalapeno, onion and bell pepper until browned.
Drain and set aside.Melt butter in the same pan.
Sprinkle in flour, salt and pepper.
Slowly whisk in 1 1/2 cups FF or 1% milk and worchestershire sauce stirring constantly until the mixture thickens, about 5 minutes.
Stir in 7-8 oz of Trader Joe’s Lite 3 cheese blend.
Ooey gooey cheesy sauce – yum!
Return the Philly cheese steak mix and stir just until combined.
Fold in cooked gnocchi.
Tadah…not really fancy it pretty, but, I promise it’s so good.
I love how the peppers add a crispy bite and a bit of spice, but, the fun part is eating little potato gnocchi bites that are coated with cheese. This recipe totally reminds me of grown up hamburger helper lol.
