Pickled Peppers

Hi all! This week has been so busy with visitors at work from around the world and I’ll be happy when things go back to “normal” next week. I’m counting down to the long weekend. All week long I’ve been digging my cereal bowls for breakfast. It’s fast, easy and fun to eat.

30 grams multi grain flakes, 8 grams Crunch Berries, 1 banana, 1/2 cup fat free milk (6 sp)

My liquid motivation for my AM snack – I actually do a mobile order every day so it’s ready to walk in and out….no waiting required!

Grande iced Nonfat Latte with caramel on top (3 sp).

I grabbed from my work freezer stash today. I know it looks awful but it was really quite tasty.

2 Trader Joe’s Black Bean & Corn Enchiladas for 8 sp.

Paired with a pluot & nectarine.

Dessert – 11 Belly Flops with coffee (2 sp)

I was starving on my drive home so I had a packet of these Crisps. (4 sp)

We are going to have an absolutely delicious week with Blue Apron this week. I love the bonus fried chicken recipe with spicy honey that I think I might try in my air fryer this weekend.

Tonight we made the Spicy Korean Chicken Baos. I was tempted to title my post “Bao chicka bao bao” but The Husband vetoed it šŸ˜€

I loved the summer green bean salad. I blanched the green beans.

Halved the tomatoes with a little salt & pepper.

Did a quick pickle with sugar, rice wine vinegar, water and a little salt & pepper.

I am now a huge fan of pickled peppers!

Tossed all together with the pickling juice sans olive oil. Love!

Meanwhile, I seasoned the chicken with salt & pepper before Browning it in 2 tsp olive. The sauce is simple – black bean sauce, gochujang (spicy Chile sauce), water.

Not really the best way to steam your buns but it worked.

I stuffed the Baos with a little chicken & pickles and did not use any mayo. I was a but nervous The Husband may not like it but he did. He ventured on the wild side and ate 4 tacos (what he called them lol).

It was sweet, spicy, doughy and the pickles gave a bright crunch. (2 Baos for 8 sp).

30 Daily Smartpoints, 14K steps (1 hour walk)

Tomorrow is a long day at the winery so I’m off to catch some zzzz’s.

    I see you just got an Air Fryer, I have had mine a month or so and I am trying to love it…. not so much so far…. Keep me posted…
