Quickie

Happy Friday Eve all!  This is going to be a quick post because I have TWO awesome recipes to whip up ~ HOMEMADE DARK CHOCOLATE ALMOND BUTTER CUPS and my CEiMB Recipe of the Week ~ Apple Brown Betty.  Recipes and photos coming up tomorrow if you are interested 😉

For breakfast, I brought back one of my FAVORITE sweet protein packed, nutty breakfasts ~ Mock My French Toast ~ topped with a little Super Nutty Granola & Agave(6 pts)

I am continuing my 1/2 cup veggie challenge with breakfast into October because I LOVE it oddly enough lol.  FAVORITE Breakfast Veggie Combo so far ~ Peppers & Snap Peas (0 pts).

Pre-bootcamp FUEL ~ some Serious Snacks ~ Cabot HOT Habanero and Kashi Crackers (3 pts)

Boot camp today was AWESOME!  It is how I picture the Biggest Losers working out for real.  We started out with a weights warm up before lapping the building and settling into a Bootcamp Obstacle Training Course.

We did this 4 times with 45 seconds at each station:

* Holding a 12 lb medicine ball, lunge pulses

* Ladder Drill (not sure of the name)– we ran up and down a ladder on the ground where you criss cross back and forth stepping both feet in and out

* Jump Rope

* Stretch band squats left and right

* Raising an 8 lb Medicine Ball up/down as we did jumping jacks with our feet

* Bent over rows using resistance bands tied to a poll

It went by so fast, yet, it was such a great workout that was tough but didn’t seem like torture. LOL

Lunch was “s’more” Roasted Spaghetti Squash topped with Turkey Cabernet Sauce. (4 pts)

After work we headed to my FAVORITE hair dressers  ribbon cutting ceremony.  I think it’s so cool that I have gone to the same person since I was 18 years old and she is now opening her very own salon called REFLECTION SALON & SPA!

So PROUD of her – her place is awesome and her prices are good so if you live near Folsom/Sacramento, check it out, you won’t be disappointed 🙂

I actually passed up the wine, but, did dig into some cheese squares, a mini crab cake and a caprese skewer.  I somehow forgot entirely about my camera and picture taking too – oops.

Then, it was off to dinner at Mexquite with my family to continue the celebration.

Their menu was a book with so many great choices, but, I opted for a Tostada Chicken Salad.  It was interesting……..

It was more like an open burrito ~ The plate was HOT with a tortilla topped with tons of hot beans, melted cheese, shredded chicken, lettuce, avocado, tomato, pickled onions and more cheese.  It was just ok and I only ate about 1/3 of it because the lettuce got all wilted.

Sooo, how was that for a “quickie” post….told ya it would be short, sweet and not so to the point LOL….

Alright all ~ I have some dark chocolate and almond butter calling my name 😀

    first I love your halloween themed decorations! second, that bootcamp sounds awesome !i teach a class like that but its inside in a studio but I have them doing all sorts of plyometric drills circuit style, they love it!!

    mock french toast sounds awesome!!

    I commend you for being able to eat raw veggies in the morning. I love veggies, but much rather prefer them later in the day. Unless pumpkin in my oatmeal counts? 🙂

    the greatest posts are never “to the point”. I just did a spaghetti squash recipe on my blog too. I think I’m addicted. Thats so you stayed with the same hair stylist for so long. I’m awful, I “cheat” on mine all the time.

    Mini “crap” cakes? LOL.

    The French toast looks so yummy and the boot camp sounds awesome! Can’t wait to see the recipe for the almond butter cups. 🙂

    i sooo have this mental idea that bootcamp is like TBL and I love it! 🙂

    that spaghetti squash looks awesome and is now on my list for the grocery store
