Today’s Guest Posters is one of my FAVORITE people because I have been reading her site(s) for as long as I can remember ~  before I think I really knew blogging existed :D  Roni has successfully lost over 70 lbs on Weight Watchers and kept it off for years. She inspires me every day to realize leading a healthy lifestyle is about the journey, not the destination.  I LOVE that she eats real food, eating what she craves and is always finding a way to put a healthy spin on recipes.

I am honored to have her guest posting about a “day in her life” a la Danica’s Daily style 😀

Danica asked if I’d be interested in guest posting while she was away and I thought, why not? But what do I post about?

Then it hit me. Why not do a "Roni Daily." I normally keep a food journal on twitter but not a pictorial one on the blog. So I decided to just pick a day and started snapping!

I chose Saturday and whenever I’m home on a Saturday the first thing I do is head to the gym for a workout. I normally leave before anyone else is up in the house. It’s totally my time. 🙂

When I get back I make a big breakfast. I make what I call Mommy and Me Omelets. Little guy gets a cheese and I get a veggie…

Even though my "toddler" is much bigger now he still like a plain omelet. I paired mine with some turkey bacon I happen to have and made the husband 3 over easy. It was a GREAT family breakfast.

Afterwards I popped my horse pill. I’m 2 and a half months pregnant so I’m all about the prenatal vitamin right now. Look at this thing.. it’s HUGE!

Soon there was big excitement in the house. Daddy caught something outside while cutting the lawn and brought it in for us to take a look…

It was a praying mantis! We checked her out for a few minutes and then let her go in the woods.

Once the excitement died down I got to work. I had a fridge full of veggie from the farm to clean and cut. I’ve recently joined a CSA (Community Supported Agriculture) farm. It’s awesome! Every friday we go pick up our share and I get a bunch of fresh veggies to cook with all week.

We also get a ton of fresh herbs! Something I didn’t expect. At first I wasn’t sure how to store them but soon figured out a system that works for me so I recored a quick video for GreenLiteBites.

After I was done with the video I made a quick snack. A smoothie using fresh papaya, 1/2 banana, frozen strawberries and some almond milk. Delicious!

Soon it was time for lunch. Little guy and I decided to eat our leftovers from the Japanese steakhouse…

I had salmon and some fried rice left…

Before too long it was snack time. I swear.. we are always hungry in my household! At least Little Guy and I are. The husband is a different breed. He rarely eats. We settled on some fresh cantaloupe I cut a few days earlier.

With all the tomatoes I had from the farm I decided to try to make some fresh tomato soup. I only took taste tests though.. I wasn’t in the mood quite yet. I wanted to be hungrier so I could dunk a grilled cheese. 🙂

While cleaning up I snuck a graham cracker or two. I buy the Old Fashioned ones from Trader Joe’s. Made with whole wheat and they are simply to die for!

Since I had a case of the munchies–when DON’T I? I decided to make some kale chips. I had a pound of kale from the farm and I didn’t have any other plans for it. So why not? Plus the Little Guy is a fan too…

At this time it was about 4 or maybe 4:30 and you know what Irish the cat was doing? THIS…

ALL day. She has no shame. lol

And now it’s time for dinner. It’s Saturday and football season so normally I make something fun. Wings, chili, pizza or in today’s case Stromboli! I have a veggie recipe using Trader Joe’s whole wheat pizza dough.

It’s one of my all time favs!

As a late night snack I had some lemon sorbet, but I was too lazy to grab the camera. Lately, I’ve been such a sorbet whore. It helps settle my morning sickness tummy. 🙂

I have to thank Danica for asking me to do this. It was TOTALLY fun! Maybe I should start keeping pictorial food journals on Roni’s Weigh…. Hmmmmm…

    Great guest post! I’m a huge Roni fan!!!

    I’ve wanted to join a CSA by me, but I’m afraid I would throw out stuff because I didn’t know how to cook with it… Your food looks delish!!

    And my cats sleep like that too…what a life!
