RT Pizza Sandwich ~ My new pizza LOVE!

Today was such a “Monday”, but, I made it a point to give my best effort to find balance this morning.  I started my day off in Bikini Boot Camp Fashion.  I lit my Mandarin Orange Oils and put on my soothing beach music.  I started with 10 minutes of meditation followed by 20 Minutes of Gentle Hatha Yoga.  It felt like I was ringing out all the stress/tension in my body and giving myself a massage ~ ahhhh!  Seriously….I need to remember that is such a fantastic way to start my day.

It’s funny how when you start your day off like that you want to follow it up with healthy, CLEAN eats.  I had a BIG crunchy nectarine to start.

My main course was Lemon Meringue Pie Greek Yogurt.

1 c Trader Joe’s 0% Greek Yogurt

1 tsp Trader Joe’s Lemon Curd, swirled around

3 Tbsp Kashi Honey Almond Flax Crunch

I LOVED the simplicity of my breakfast, but, it had all the components that I needed ~ a little protein, a little fiber, some crunch and some fruit.  All for 5 Weight Watcher Points!

Since we were not around all weekend and off having fun I used my lunch hour to run some much needed errands.  I was completely craving salad & pizza so I stopped at Round Table Pizza and made up a fantastic salad.  I was surprised at all their options and they even used good lettuce.  Who knew a pizza place could be a good, cheap place to make a nice salad.

Bottom layer ~ romaine lettuce with purple cabbage

Cherry Tomatoes

Super baby carrots – so little

Mushroom slices

Cucumber slices

Broccoli trees

Sprinkles of sunflower seeds, raisins and a little cheddar cheese

1 egg, but, I only eat the white

I drizzled it with balsamic & olive oil after I snapped a picture ~ so good!

For my pizza, I picked their RT pizza with bell pepper, red onion and mushrooms as my topping.  Instead of using pizza dough, they use a homemade ciabatta sour dough roll and cut it into 6 slices.  I LOVE the concept and seriously need to make this at home!

I LOVED every bite and think I spent about 30 minutes in pure food bliss thinking it doesn’t get much better than this LOL.  I honestly think it is worth all 9 Weight Watcher Points for the entire thing!

If you are ever near a Round Table Pizza, I highly recommend skipping the pizza and ordering this fantastic RT Pizza Sandwich (you can pick any 3 toppings you want).

    OMG that pizza looks sooooo yummy. So the pizza sandwich comes on that roll, or did you specially order it that way?

      Tay ~ You order the pizza that way – it’s called an RT Pizza Sandwich. You pick the 3 toppings you want and it comes on top of the bread with sauce and cheese. I did the lunch special that came with a salad, drink and chips (didn’t eat the chips). But, it wasn’t bad for $9.

    I’ve been curious about meditation. I’m so open to trying it, but really don’t know much about it. I’m going to try to read up on the benefits and “how to” but would love to read from you what exactly you do while meditating. Maybe you could post about your routine?

      Mora ~ That is a great idea! You know, I am not a pro at meditation, but, I learned a little bit about it when I did the Bikini Bootcamp Challenge in June. I like to set up the environment by laying out my yoga mat, turning on a relaxing ocean cd, dimming the lights and lighting my mandarin orange oil essence. Then, you can pick and choose the position depending on what you are doing. On this day, I layed on my back with one arm on my stomach and one arm on my chest symbolizing that everything I need is within me. Then, I focus on letting everything go, breathing naturally, shutting my eyes and relaxing. There are alot of forms of meditating – this is just one.

    i love pizza sandwiches! this spot near me serves up a great one. yours looks yum! but what i love even more is the nectarine and GY! mmm!
