Sausage & Egg Breakfast Tacos

Happy Wednesday all! The sky this morning was absolutely beautiful….the calm before the storm rolled in.Breakfast today was awesome. I whipped up these delicious breakfast tacos using the other half of my Jennie-O Lean Turkey Breakfast Sausage.

Saute 1/2 cup onion and bell pepper with 7 cooked sausages until lightly brown, about 5  minutes.Meanwhile, whisk 4 eggs with a little milk, hot sauce, salt & pepper.The secret ingredient – a wedge of spicy pepperjack for extra creaminess with a little kick.Add the cheese and eggs to the sausage mix. Cook over low until scrambled.When the eggs are just about done, add 1/4 cup tomatoes and cilantro. Cook to desired consistency, for me that’s 30 seconds until incorporated.“Fry” 6 Mission Extra Thin Yellow Corn tortillas in non-stick spray over medium heat, about 30 seconds each.

Divide sausage & eggs among tortillas, top with hot sauce and dive in.

I had 2 tacos for 4 SmartPoints. Yum!Lunch was simple but perfect for a rainy day.

1 cup Trader Joe’s Organic Roasted Red Pepper and tomato soup (4 sp).Paired with 1/2 a turkey grilled cheese (1 slice butter bread, 2 slices turkey, 1 slice Sargento RF Cheddar, 1/2 Tbsp whipped butter) – 5 sp and a cutie.Today is the first day in my two months off that I finally gave into watching movies and playing games all day with The Husband.

We watched The Crash (not good), Bay Watch (super cheesy but funny), The Amazing Race!! and now Going In Style (funny/cute).

Mid afternoon snack 100 Calorie Kettle Korn (3 sp). I also had 6 peanut M&Ms for 3 sp.Tonight’s dinner was The Husband’s request for steak and potatoes. I followed this recipe using alot less oil/butter. It was a total hit – I’m pretty sure he would’ve licked his plate if there was anything left lol.

The mushroom wine sauce added great flavor to my 2 oz steak medallion.I piled on the kale with 1/2 cup mashed potatoes. I did add a laughing cow wedge and splash of milk to the potatoes making them super creamy.All together my plate came in at 9 SmartPoints and was worth every one.

Fun fact – I serve most meals on my small salad plate so mentally it feels/looks like more.28 Daily WWFreestyle Smartpoints, 4K steps

    I just started Weight Watchers on New Year’s Day so I was really excited to see your recipes. I love watching Amazing Race; so far, I don’t have a favorite team. Do you?

      Yay for joining – we can support each other on our journey sharing ideas. As for Amazing Race – so far, I like the Ski girls and the Yoga girls need to go, but I need to see more from the others to pick a fave.
