Happy Friday Eve all! I am so excited that the weekend is just one day away. I successfully checked off all the boxes in my day today – tasty/healthy eats, a workout and chocolate. I feel like all my eats today were super simple but delicious.
I woke up super hungry so I decided to cook something that would stay with me for awhile. Trader Joe’s hash brown patty fried in a teaspoon avocado oil with 1 1/2 scrambled eggs. (5 sp). Togo…I grabbed a tall nonfat cappuccino on my drive in (2 sp).
Before lunch, I headed out into the 70 degrees of sunshine today for a long walk with my coworker.
Along the way we both got caught in conversation and managed to get lost looking for the park until I said “Look Squirrel”.
Yep, that’s all it took for me to realize we were lost and I snapped these “action” shots.My salad today was simple but super delish.
Mixed greens, carrots, cherry tomatoes, sweet peppers, 1/2 oz 2% sharp, 2 oz turkey, 1 Tbsp sunflower seeds tossed with 1 tsp olive oil and blood orange balsamic vinegar. (3 sp).I had planned to put this hard boiled egg on my salad but decided to wait to see if I needed it. I was still hungry so I had it after my salad.
Dove Dark for dessert (2 sp).
My afternoon snack was a banana and we stopped for dinner at Chipotle before my hair appointment.
Here is what’s in my bowl:
- Lettuce
- Fajita Veggies
- Chicken (3 sp)
- Corn salsa
- Fresh tomato salsa
- 1/2 serving cheese (2 sp)
- Side flour tortilla (2 sp)

Today marks the 5th day in a row I hut my 10K step goal and my 5th workout this week.

I could totally have enjoyed this day of eats … but I might struggle with all of the salads. Do you find that you eat more salads because of the filling factor or because you really enjoy the lettuce? I personally really enjoy eating carrots, broccoli, peppers, etc … but NO lettuce or tomatoes! š
Also, how do you calculate the points for cooking oils that are used at restaurants and even at home?

I actually go through phases with salads. Sometimes I love them and cannot get enough of them and other times I cannot think of eating a single piece of lettuce. When I am not in the mood for salad, I do try adding a different veggie or fruit I like as my goal is to add a fruit or veggie with every meal or snack. I do find if my salads are different enough in a day I do not mind having more than one.
As for oils, if it is part of the recipe or food, I count the recipe or points for the entree. If they are separate, it is 1 Smartpoint per teaspoon for most oils.
I say when it comes to eating, focus on the foods you live versus forcing yourself to eat something you do not or it will feel “diety”.
