Hi all! Are you ready for Christmas? I can say I am totally ready…almost. I still need to think of a healthy Christmas dessert. Our work holiday break started this weekend and we are off until January 2nd…I may be just a bit excited about that! I have officially finished all my shopping, wrapped everything and we have started dropping our gifts off.
Before heading out this morning, I made this tasty breakfast – scrambled egg, 3 Jennie-O lean breakfast links (2 sp) and a tangerine from my friends tree.Along the way, we stopped for Starbucks and I had a tall nonfat cappuccino with caramel on top. (2 sp)We had Mary’s Pizza Shack for lunch and we bought a complete strangers lunch just because it’s the holidays and why not do a random act of kindness.
I managed to keep myself in check with their hot sourdough – 2 slices for 3 sp.I have missed this simple salad with ranch (4 sp).I picked the chicken and mushrooms protein plate for my entree counting 2 smartpoints for the sauce.I spent the afternoon being lazy, watching movies before heading to the kitchen to whip up this Simple Spaghetti with meat sauce and mushrooms.
Fun fact about 93% lean ground meat – one pound of turkey is the same Smartpoints as one pound of beef (15 total) so choose whatever appeals to your taste buds.
I sauteed 1 lb lean ground beef with an onion, bell pepper, garlic and mushrooms. I added 1/2 cup Trader Joe’s sun dried tomatoes not in oil along with garlic salt, pepper, crushred pepper flakes and Italian seasoning.Plus one jar Trader Joe’s Arrabiatta Sauce, 2 Tbsp tomato paste and 2 tsp sugar. Bring to a boil, reduce heat and simmer 10 minutes while the pasta cooks.Remove from heat and add one package cooked whole grain spaghetti noodles and toss to coat.Finish with a little freshly shaved parmesan and a sprinkle of parsley.I love the sweet bite of the sun dried tomatoes, earthy mushrooms with peppery beef, salty cheese and spicy tomato sauce.
The best part is we have tons leftover so no cooking tomorrow!
