I think summer officially arrived yesterday as it was finally HOT and we used our a/c :D I am so in LOVE with our new central heat & air. I think one of the BEST things about summer (aside from Farmer’s Markets) is that it makes you want to eat lighter naturally.
Breakfast started off with a big bowl (1 1/3 cup) of melon (1 pt).
Then, I decided I was still hungry, so I had a slice of Milton’s Multi-Grain Bread with ICBINB spray. I LOVE this bread, but, don’t love the 2 points a slice 🙂
On our way to the Farmer’s Market and do to a little shopping, I stopped and got a Venti Iced FF Decaf Latte with Caramel Drizzle (3 pts).
Since we still have some stuff left from last week, I limited myself at the Farmer’s Market. I still can’t believe nobody has corn yet this year :( There is one vendor there that has you try it raw ~ LOVE that! Come back soon my favorite “corny guy” LOL!

Almost all together with Chile Lime & Jalapeño Salsa Tortillas.
Lunch was simply amazing. It started off with a little “Asian Slaw” ~ TJ’s Organic Broccoli Slaw + TJ’s LF Spicy Peanut Vinaigrette (1 pt).
Then came the sandwiches that I think made both The Husband and I make sounds 😀 LOL Seriously ~ they were either THAT good or it’s been too long since I’ve made BLTA’s!!!
AVOCADO makes the world a better place!!! This HUGE sandwich clocks in at 6 points but tastes like so much more. No MAYO needed when you have AVOCADO!
* 2 Slices TJ’s FF Multi-Grain Grain Bread
* 1/4 mashed AVOCADO sprinkled with PINK sea salt & black pepper
* 2 slices TJ’s Uncured Applewood Smoked Bacon ~ honestly, the BEST bacon around!
* Organic Romaine and Thick tomato slices
Mid afternoon I snacked on some MORE melon plus a Mini Baby Bel Light Cheese (2 pts).
I figured I should probably get back to some real cooking since I haven’t been doing too much of that lately. I didn’t do anything fancy for dinner but, it was super filling and delicious.

Grilled Corn! (1 pt)
I whipped up a big batch of Harvest Grain Salad plus cucumber. This salad has so much flavor and great chewing texture. If you haven’t tried it, you all need to – it’s so easy and goes great by itself, over salad or off the spoon 😀 (1/2 c = 4 pts)
4 oz Grilled Center Cut Pork Loin cut into rib shapes ~ LEAN RIBS! (4 pts). I topped them with a mix of Gayle’s Chipolte BBQ & our Caribbean BBQ Sauce (to tone down the heat).
Today is the Weight Watchers Walk It 5K! My location has 2 5K’s going on – not sure if I will do one or two, but, I am excited The Husband is coming out for one of them to do it with me 😀

oh that avocado sandwich looks great! and how did you cook your chard; i just bought a huge bundle and am trying to decide how to use it!
and i need one of those herb keepers! my basil looks so sad and it’s only been a few days…i even put it in a cup of water after cutting off the tips…

I, too, love that summer has me eating lighter. Great finds at the farmers market! I keep asking DH if he wants corn when we see it, but he keeps saying he wants to wait until it’s perfect. Which will be soon, I think!

Hi Melissa,
I have only ever steamed or stir fried my chard with a little garlic and olive oil. It’s naturally sweet so the flavor I think stands out great on it’s own with a sprinkle of sea salt and black pepper.
I LOVE my herb keeper – I wish I had more but then our fridge would be overloaded with every herbs LOL. This is why I started growing herbs this year – you can have them all right there. Now, I just need to plant some cilantro.
