Happy Wednesday all! This morning The Husband said to me, “Guess what, I think your colds are all gone?” I searched high and low for some wood to knock on (not to jinx it) before I agreed with him saying, “well, I think I am 99.5% better because I was sneezing all morning”. I told him I was going to chalk the sneezing up to allergies…..which I think has now turned into the cold my co-worker has as I am all congested *sigh* I know that this too shall pass, but, seriously, I feel like I turned 40 and have been sick ever since. Perhaps I am allergic to my “40’s”?! lol
Breakfast started with 5 Mini Kale & Parmesan Crustless Quiches, 5 for SF + 1 WPA or 5 points+.
Plus 1/2 an orange.
Simple, delicious and oh so easy to heat and eat when you have a whole batch of these in the fridge.
I didn’t really think out my day very well this morning since my breakfast started with eggs (quiche), my morning snack involved a hard boiled egg and my lunch was egg salad. (SF) – 2 points+
But then, my co-worker solved my problem ~ she said she was taking me to lunch to Bounty Hunter ~ a hard core BBQ Place….
Guess what??
I found a “Pony Express Special” that totally fit into Meatless March and I didn’t miss the BBQ one bit!
Ok – well, I did sample all 3 of their smokin’ bbq sauces just in case I wanted to put them on veggies.
I started with Iced Tea with lemon and water ~ my goal was to finish both drinks before the meal was over.
My sandwich came on potato bun with grilled rosemary portabella mushroom, eggplant, squash and roasted red peppers.
I am totally grilling veggies like this ~ they had such a delicious balsamic, herby flavor. I only ate half the bun and all the veggies because the veggies wouldn’t stay inside the bun.
(SF+2 WPA for the bun) – 4 points+
Each lunch comes with a slice of their house made pickles.
Plus their spicy coleslaw that I totally put on top of my “burger” (not you know the real reason it fell apart on me). (SF + 3 WPA) – 4 points+
Yum!
I did snag a few bites of the jalapeno corn bread they gave us on the house to try it out.
(SF + 2 WPA) – 2 points+
Tonight’s dinner involved a spin on Spicy Sweet Potato & Black Bean Crunchy Tacos
I found these really cute potatoes at my local grocery store so I decided to switch out the Sweet Potato for them.
Pretty much because I love anything MINI!
I rinsed them, chopped off any funky spots and cut them into little pieces.
Sprinkle with a little Homemade Taco Seasoning and drizzle with some olive oil.
Toss and pour them in a single layer on a cookie sheet.
Roast at 400 degrees for 20 minutes stirring half way through to get all sides browned and crispy.
While the potatoes roasted in the oven, I made a batch of Basic Black Beans. They are incredibly easy to make and taste like you have been cooking them all day versus just 15 minutes.
Normally I only use onion in my beans, however, our fridge is over flowing with every veggie in town (as I stocked up for Meatless March!) so I added a little sweet and heat (sweet pepper & jalapeno) too.
Caramelize for about 5 minutes over medium heat in a little olive oil.
Add the drained and rinsed black beans, a sprinkle of taco seasoning, salt and 1/2 cup water.
Stir and let simmer for 15 minutes until majority of the liquid is reduced.
Build your tacos! You can use any store bought crunchy taco shell then add a layer of spicy potatoes.

All the veggies you can fit in the shell ~ I used a romaine mix I made with tomatoes and green onions.
Add in a treat like Guacamole!
I will say that next time, my first layer is going to be guacamole because it doesn’t really work so well being on top.

- Day 5 ~ 100% Vegetarian and I survived a BBQ Smokehouse Luncheon not feeling deprived!

I made the vegetarian minestrone yesterday. Snuck a little taste but can’t wait to have it today. Now I can’t wait to make these tacos. Thanks for all the great ideas.
I never would have thought to put oven baked potatoes in a taco – brilliant! I’ve been thinking of having the traditional taco for dinner, but this “vegetarian” version is going to be tried. Thanks for sharing.
I’m definitely going to try those tacos! I’ve been eating a version of your egg muffins all well – I just used chopped up turkey bacon instead of sausage, and left out the “southwestern” kick. Question: do you consider hummus Simply Filling? My WW leader says it depends on the ingredients, and I notice you never really eat it. Thoughts?
