Happy Weekend all! Thank you all for sharing your Vegetarian St. Paddy’s Day recipe ideas. I haven’t decided yet what to make but I need to pick something soon since it’s only two days away. You know, I have to agree with Leah I should’ve saved my “Eating in Circles” title for National Pi Day 03-14. Next year!
There have been so many tasty eats the past few days that I do not know where to start. So, I am just going to do a Weekly Photo Highlight of my favorite things and if you see any recipes you want me to post, just let me know.
BREAKFASTS
My current fruit addiction ~ grapes & berries. I love the sweet and tart crunchy combination.
I love it when the sriracha and cheese go all over and my tortilla gets super crunchy when I leave it in the pan too long in my Healthy Egg Rolls (SF + 1 WPA) – 5 points+
Subway 3 Inch Veggie & Egg Flat Bread sandwiches ~ so simple, yet, so delicious.
(SF + 3 WPA) – 4 points+
LUNCHES
We had our birthday lunch celebration catered by Panera at work and I totally made it work vegetarian style!
I am in love with this Mediterranean Veggies Sandwich. (SF+ 7 WPA) – 7 points+
Served with a Classic Salad w/ RF Balsamic on the side. (SF)
Cookie Dough Ice Cream Cake ~ need I say more?!
Have I ever mentioned The Husband is crazy about anything with beans and cheese along with chips and salsa?
So, I decided to combine all his favorite things for a fun lunch.
Who says you have to make 7 layer bean dip only for parties?
He actually sliced all those olives himself!
Served on top of lettuce and topped with jalapenos and sweet pepper chips.
(SF + 1 WPA) – 4 points+
Scooped up with homemade corn tortilla chips. SF + 1 WPA per tortilla or 8 chips.
DINNERS
I’ve found two meat substitutes that have worked at helping The Husband out since he started missing meat this past week. Here is one..the other is the burgers I made tonight.
Morning Star Buffalo Chickless Sandwiches
My favorite dinner of the week ~ Veggie Lettuce Wraps!
My proteins were these delicious cremini mushrooms and yukon potatoes.
Sautéed in sesame oil with fresh ginger, garlic.
Then, tossed with a little hoisin, soy and sriracha sauce.
100% Simply Filling and Vegetarian! I love how the crisp lettuce offset the sweet and spicy crunchy veggies.
HIs favorite dinner of the week ~ Big Mac-Less Burgers as he called them
I am sure you all have noticed I am not too big on meat substitutes because most seem so processed. These Boca Burgers are not too bad and the smoky tasty really goes a long way with flavor.
So does having excellent toppers ~ crispy iceberg, sweet red onion, juicy tomatoes, crunchy pickles and a “Almost Fast Food Burger” secret sauce.
SF + 3 WPA for the bun – you could use a reduced calorie bun and have it be 100% SF.
I also made a batch of my Vegan Harvest Grain Salad for sides and snacks this week.
Today marks the half way point for Meatless March and I am still digging it. I think the key really is to keep healthy options on hand to grab and go, but, also, to try new recipes that I am excited about.

Awesome job so far! You Hub is good!! NO WAY would Bryan ever eat those Boca Burgers 🙁 Not sure I would either as I try to stay away from soy protein…but you sure make them look good! Have you posted the Veggie Lettuce Wraps before? Would love that one!!
I would love the recipe for the 7 layer dip. Where did you get the cookie dough cake? That would be awesome for my son’s 19th birthday in May.

I’ve noticed how nice and melted your cheese looks on your tortilla/egg breakfast. Are you using the extra thin sliced cheese – I discovered it in target and for only one point per slice, I LOVE IT. Also, I have never been able to find low calorie hamburger buns – where do you find them? Love your blog. It has given me inspiration and usable information. Thanks. 🙂

I had been using the reduced fat Sargento slices but just tried the ultra thin when I saw them this past week. You are right so worth it and it was a nice change.
The only light buns I’ve found are the thin buns. We used real deal buns for our burgers.
