Hi Danica’s Daily Readers!

My name is Martha and I have a blog called Simple Nourished Living, where I write about baking, cooking, eating and living happy, healthy and slim.

Like Danica, I’m an avid fan of Weight Watchers. I achieved lifetime more than 20 years ago after struggling with my weight through most of my childhood, teens and 20s. While, I’ve had my challenges with maintenance, I feel like I’ve finally found my equilibrium thanks to power foods, Simply Filling, and the mind/body benefits of yoga. For the first time ever, I’m actually several pounds under the goal I set in my late 20s and it feels fantastic.

I started Simple Nourished Living as a way to chronicle and share my Weight Watchers friendly recipes and healthy balanced living tips with other like-minded food lovers who aren’t willing to sacrifice taste and food quality in the name of weight loss.

When Danica asked me to to provide a guest blog I was thrilled and jumped at the opportunity!

Skinny Mini Impossible Pumpkin Pie Bites

I love to eat and cook and tend to be a creature of habit – eating the same or similar foods for days or weeks until I get bored and move on to something else. At this time of year I spend a lot of time satisfying my love of pumpkin and can’t tell you how many cans of pumpkin puree I’ve gone through these past several weeks.

I love pumpkin pie, but not the soggy crust, so decided to create these crustless mini pumpkin pies. I’ve dubbed them “Skinny Mini Impossible Pumpkin Pie Bites” since they’re based on the old Bisquick recipe for Impossible Pumpkin Pie, baked up in mini muffin tins, instead of a pie dish. To make them a little more Weight Watchers friendly, I substituted fat free evaporated milk for regular.

These Skinny Mini Impossible Pumpkin Pie Bites are a delicious way to enjoy pumpkin pie in a portion controlled way. I hope you love them much as we do and stop by Simple Nourished Living for more easy, healthy, Weight Watchers friendly recipes!

SKINNY MINI IMPOSSIBLE PUMPKIN PIE BITES (print it!)

Low Fat Mini Impossible Pumpkin Pie Bites

INGREDIENTS:

  • 1/2 cup Bisquick baking mix
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1 cup evaporated non-fat milk
  • 1/2 cup sugar
  • 1 Tbsp. butter, softened
  • 2 large eggs
  • 1-1/2 tsps. pumpkin pie spice
  • 1 tsp. vanilla

INSTRUCTIONS:

1.  Preheat your oven 350 degrees. Spray mini-muffin pans with nonstick cooking spray. (You should have enough batter to make about 36 mini pumpkin pies.)

2.  In a large bowl, stir the Bisquick mix, pumpkin puree, milk, sugar, butter, eggs, pumpkin pie spice and vanilla together with a wire whisk until well blended. Carefully pour into the cups of your mini muffin tins, filling them about 3/4 full.

3.  Bake 18 to 22 minutes, or until the thin blade of a knife inserted in the center comes out clean. Remove from the oven and cool completely on wire racks. Loosen around the sides of each mini muffin cup with a sharp knife and carefully remove your mini impossible pumpkin pies, transferring them to a plate. Cover with plastic wrap and store in the refrigerator.

4.  Serve with your favorite low calorie whipped topping if desired.

Makes about 36 mini pumpkin pies, 1 points+ each

    Just added this to Thursdsy’s menu – happy to find a dessert I can enjoy without guilt! Planning to use mini fall cookie cutters and bake pie crust cutouts to garnish for those in my family that must have crust. Happy Thanksgiving 🙂

    Oh Martha, These were amazing. I had a leftover can of pumpkin in the fridge, so I just made these. Oh so good! Can’t wait to go check out all your other recipes. Thanks so much for this one.

    Can you use Almond milk to replace the evaporated milk? I have a milk allergy and I love pumpkin anything.
