Soupy!

Happy Hump Day all!!  We arrived home on Sunday night and I’ve spent the better part of this week getting settled back into our routine.  You know ~ priorities ~ unpack all the fun things we bought ( & shipped home!), laundry, check out recipes, restock our food, Weight Watchers for the new updates!….oh and work has been in there too LOL. 

Yesterday marked Day 1 of getting back on track and I am actually “excited” to get back to journaling.  I’ve missed talking FOOD with you all.

The Husband gets MAJOR kudos because he actually went out and put gas in my car this morning since I was running late.  Not only that…..he came back with this!!! LOVE!

My new FAVORITE low points+ drink ~ It tastes just like chocolate milk!

Venti Iced Coffee with 1 pump Mocha and a splash of FF 1/2 & 1/2 (1 points+)

Breakfast part 2 was even BETTER!  Remember these VEGETARIAN Cheesy Sausage Breakfast Burritos?!

It honestly tastes just like a Sausage Egg McMuffin and all for 6 points+!

I also brought back another favorite for lunch ~ Ak Mak Crackers!!

My “Chickpea” friend over at the Broccoli Hut introduced these to me a few years ago and I personally think they are the BEST cracker out there.

I am usually someone who shy’s away from crackers because they rarely fill me up and I ALWAYS want more than a serving.

But, with AkMak Crackers ~ you get FIVE BIG crackers for only 3 points+.

As in crackers the size of the entire box! Top with a creamy Laughing Cow wedge for 1 points+ (and apricot jam if you have it too!)

I’ve missed my simple salads topped with 2 Tbsp’s of Trader Joe’s Spicy Peanut Vinaigrette (4 points+).

I also unthawed some of the Butternut Squash Soup I cooked the morning we left and froze just so I could have it when we got back. (4 points+)

I ended up saving my cuties for snack with a Trader Joe’s Lite String Cheese (1 points+)

The Husband had oral surgery on his mouth to put the temporary crown on so for the next week we are both on a “soft foods” diet.  I honestly think I bought everything for him that is soft ~ refried beans, mashed potatoes, mac n cheese, ice cream, smoothie stuff, jello, pudding, applesauce, yogurt…..Think I missed anything??? lol…

Then, I made sure we had a big batch of Crockpot Split Pea Soup to come home to. (7 points+).

    Thanks for sharing all your foodie inspiration Danica! I’m having some MAJOR Trader Joe envy after reading this and have promised myself to get over to the Missouri TJ (they sell the wine that their KC KS store is not allowed to sell!). That peanut salad dressing sounds yummy!

      Hi Shannon,

      Thanks for asking and I promise I have not forgot you! Things have been insanely busy, but, I think I am finally starting to settle in. West Sac is not bad, but, I think I am IN LOVE with Old Sac more. We still need to get together for lunch and to explore the great eateries down there. Let’s try to do that in the new year.

        Yes, we definitely must get together for lunch one day! I agree, Old Town is adorable! And the great thing is that you are right there and can walk there if you want to! My work will be moving to Rancho Cordova in May so if you want to do lunch before then, let me know! Or if you wanted to after work, I’m always open! Although, I know you have quite a commute home!

    My Dear had a bunch of work on his mouth on Tuesday and has to go back next week so soft foods are in his future too! He’s already getting tired of soups, so I’m thinking some pasta or rice dishes… Eggs and fluffy pancakes were soft last night!

    I wonder if your Trader Joe’s light string cheese is different than our (Seattle) version? Ours is 2pp for 1/3 for 2 (I always have 2!).

      Hi Paige,

      Are you talking about their “Lite” String Cheese Sticks? I doubled checked and ours are 1 points+ per stick. Maybe it’s a different product?

    Your food today looks very enjoyable. That is the kind of stuff that I like to pack for work. Love the salad, simple and yummy. I wonder if they have those crackers in Canada. I have the same feeling about crackers, but I love the stats on those and really hope to try them. Yum., Welcome back!
