Happy Wednesday all! I love that my work week is just starting and there are only two days left ~ whoever created our 5-2 work weeks had it all backwards. It should be more like 2 – 5 or at least 3-4 lol. It was so fun to read about all the things you all loved receiving this year – for me the holidays really are all about the memories they create more so than the gifts received.
Ok….well, and the food too! Do you all remember my love of leftovers? For those who dig them with me, then, here are a few new ideas for using up your holiday ham. For those who do not like leftovers, just pretend each dish is brand new lol.
This morning, I put a “Hammy” spin on my Healthy Egg Rolls. I “fried” the tortilla up with a slice of 2% sharp cheddar and a squiggle of Sriracha, then, topped it with 1/3 cup scrambled egg beaters that I cooked with ham I “fried” in nonstick spray. (SF + 1 WPA) – 4 points+
Breakfast was so incredibly tasty and kept me full for 5 hours. I couldn’t wait to dive into our Holiday Feast leftovers for lunch. I pretty much had a little of everything starting with more ham.
I will give the leftover loathers this one….I didn’t really change up the ham and pineapple into something new. It was so amazing though it didn’t need anything other than a little heat.

I seriously pondered eating one of these Lemon Pudding Cakes for breakfast and then with lunch. But, I actually managed to hold off and have it for an afternoon snack with coffee.
These little cakes get a little more dense the next day with a cheesecake texture without having any cream cheese in them at all. So lemony, tangy, sweet, creamy ~ good!

Dinner tonight is a spin on my Simply Filling Vegetarian Fried Rice Recipe. I was pondering all the ways we could use up our leftover holiday ham last night when I realized I needed a little fried rice in my life. Not just any fried rice, but, Honey Ham fried rice with sweet pineapple chunks and crispy vegetables.
I totally cheat when I make this by using Trader Joe’s Frozen Organic Brown Rice Packets. They take only 3 minutes to cook up brown rice that tastes just like you made it.
HAM & PINEAPPLE FRIED RICE (print it!)
- 2 tsp. dark sesame oil
- 1 garlic clove, minced
- 1/2 cup diced ham
- 1/2 cup diced pineapple
- 2 cups cooked brown rice
- 1 cup thawed Frozen Vegetables, any type works
- 1/2 cup egg beaters
- 1 Tbsp. Soy Sauce
- 1 Tbsp. Teriyaki Sauce
- 1 tsp. Sriracha Chili Sauce for some sweet heat!, optional
- 2 green onions, diced
1. Heat a large skillet or wok over medium heat. Add oil, garlic and ham cooking for 1 minute or until ham starts to brown a little. Add in rice and toss /stir to mix & coat rice with oil/garlic. Add veggies and pineapple, then cook until heated through.
2. Make a hole in middle of pan; add egg beaters and scramble until cooked. Stir entire pan, mixing egg into rice.
3. Add soy sauce and sriracha, cooking for 1-2 minutes until the sauce is absorbed. Remove from heat and stir in green onions.
Makes 3 one cup servings for 7 points+, Simply Filling + 1 WPA for the sesame oil

Served up in my 1 cup measuring bowl ~ I have no doubt the lady bug was trying to take off with my Spicy Ham & Pineapple Fried Rice ~ It was really that good!
