Happy Friday Eve all!!! Have you ever noticed that some days your pictures turn out awesome while others days you wonder what happened to your camera or you just simply forget to take pictures……all of the above seems to be my problem lately.
It was tough getting up this morning again at 5 am, but, I did it! Now if I could only convince my brain to remember to take pictures, that would be good.
On the train I snacked on 3 slices of Trader Joe’s Peppered Turkey with some pineapple (1 points+) I managed to snap a picture of the pineapple but the bacon is no where again lol.
The combination was weird but good at the same time ~ protein + carbs!
When I got to work, I spent 30 minutes on the Elliptical letting my music dictate the beat and increasing the intensity with each song.
Post workout ~ I snacked on the last 2 of my Kodiak Cakes with 1 Tbsp Whipped Butter and 1 Tbsp pure maple syrup….Deliciousness! As I was eating them I was already thinking when I can make them again! (7 points+)
I really think getting up so early in the morning makes me a lot hungrier all day long. I actually pack a morning and an afternoon snack each day but only eat them if I am truly hungry.
Mid morning, I was STARVING so I dug into some Pea Pesto with 5 Trader Joe’s Social Crackers. I honestly LOVE this pesto….I bet it would be awesome with some pasta and sun dried tomatoes. (4 points+)
Having a late morning snack worked out perfectly because I didn’t get a chance to sit down to eat lunch until almost 2 pm.
Super Fast Asian Slaw!
1 cup Organic Broccoli Slaw
1/4 Organic Shredded Carrots
2 Tbsps Trader Joe’s Spicy Peanut Vinaigrette (2 points+)
Pinch of Crushed Red Pepper flakes
I created a little Mexican-Asian Fusion by having some Simple Spicy Shredded Pork Tacos with my slaw. (8 points+)
This afternoon I had the chance to interview Maria Menounos and ask her all your questions about her new book and Yoplait via a Skye Video Call as part of the new Yoplait Greek Yogurt product launch. I will be sharing the video with you all when it’s done!
When I got home The Husband told me he could make dinner since we were having steak…..ummm, NOTE TO SELF ~ Make steak all the time if it means he will cook
We marinated a a London Broil in Spicy Teriyaki Sauce last night. I had 3 ounces for 3 points+. It actually didn’t turn out as spicy as I was hoping so next time I think I’d use Sriracha or crushed red pepper flakes too.
SPICY TERIYAKI BEEF
Adapted from the Weight Watchers Just 5 Cookbook
INGREDIENTS
- 1.25 lbs London Broil
- 1 Orange, juiced
- 4 Garlic Cloves, minced
- 1 jalapeno, seeds and all, minced (used your food processor or mini chopper)
- 1/3 cup Teriyaki Sauce (I used Trader Joe’s Island Soyaki)
INSTRUCTIONS
1. Combine the orange juice through teriyaki sauce in a large ziploc bag. Add steak and marinate 2 hours, but, preferably overnight.
2. Preheat grill to medium high heat. Remove steak and discard broth/bag. Grill for 30-35 minutes or until steak reaches desired doneness.
3. To cook in the oven, set the broiler and spray a broiler rack with nonstick spray. Add steak and discard the marinade. Broil 5 inches from the heat, about 5-6 minutes or until desired doneness is achieved.
4. Remove, let rest 10 minutes and slice into 18 strips.
Makes six 3 ounces cooked servings, 3 points+ each
Served with a side of Annie’s Shells & White Cheddar (7 points+)
Plus a simple salad topped with 1 Tbsp Newman’s Lite Lime Vinaigrette (1 Points+)

Do you prefer to cook your food on the grill or in the oven?
As you all may have noticed, I am all about the GRILL for two reasons. One, I think it just tastes better, but, TWO and this is a biggie for me ~ there are NO DISHES/PANS to clean with grilling

That steak looks awesome…makes my mouth water. I have to get me some of that Neuman’s salad dressing – I love lime in everything!!
I’m a grill gal…love cooking outdoors in general…camping, picnics, and grilling on the BBQ grill on the deck. This past summer I got into grilling pizzas…can’t wait to do that again – just have to find the right ‘points friendly’ recipe!
I can’t find that Newman’s Lime dressing, I know I saw it somewhere, I wanted to use it for a steak salad. The hunt continues…
I love to grill and agree everything tastes better.I did steak and asparagus last night with a glass of red wine. The Best!! Going to throw some pork chops on there this weeekend.

I prefer the grill but find the oven/broiler to be equally easy. I line everything I can in foil and then don’t have to wash the broiler pan. Besides, with all this crazy rain in the bay area, who can even think of the grill?
Love grilling in the summer but living in the South winter and early spring I mainly use my oven. Read how hungry you are all day when work out in the mornings, I do the same thing, if I walk or any other exercise first thing in the morning I am wanting to eat all day!

That pea pesto looks good however, I don’t like pea’s. Such a disappointment for me. 🙁
Mmmm… steak! 🙂 Congrats on getting up so early all week and getting in your workouts! Hopefully it will get easier as time goes on. As far as the grill vs. oven question – I prefer the grill. I’m with you, one less pan to wash! Plus the grill gives it a nice flavor. Unfortunately I’m in the northeast and for the winter my grill was covered (and I do mean *covered* this year) in SNOW! It’s warming up now – already planning to break it in on Sunday!
The GRILL! I mean who can argue with less (no) dishes to do and better flavor?!
Definitely the grill! Give Stubb’s beef marinade a try – it is awesome & has a little kick (at least for me anyway!).
My husband grills 4-5 nights a week, he loves it, and I think it tastes better. In the summertime we never use the oven, because when it’s 110 degrees outside, who wants a hot kitchen?
Last night I created an awesome asian coleslaw type dish, with that Spicy Peanut Asian Vinegarette dressing, can’t wait to have it for dinner.
I shredded a head of cabbage, some carrots, onion, yellow bell pepper, diced up some cilantro, and a jalapeno, then tossed the dressing in with it. It is delcious, and only points for the dressing. We are going to serve it up with some of my husbands almost famous BBQ pork ribs, he does not put BBQ sauce on the ribs, he makes his own rub out of certain spices, and the meat literally melts off the bone, it’s so good.
I have GOT to try that pea pesto!!! In the summer I’m a griller, in the winter, an “oven-er”. And am very excited that soon I’ll be a griller again. Have a great weekend Danica!
It’s funny, because whenever I find a spicy marinade, and it isn’t spicy, I complain to my husband. He kindly says “honey, you’ve burned all your taste buds off with all the hot shit you eat so you can’t taste how spicy this is!”
That is why I have sriracha sauce at the ready at all times! Well, that and my beloved Tabasco 😀
I am posting a pumpkin coconut soup tomorrow – 2 cups is only 3 points and its delicious – I put a teaspoon of diced chipotle peppers in it – so damn good!

The steak looks fantastic! I can’t wait until the weather warms up around here so that we can use the grill. It’s still chilly hear, so mostly oven meals here still. The closest we get to the grill these days is our grill pan. Hope you have a fantastic weekend, Danica.
