I LOVE Spring ~ I think it’s my favorite time of year aside from Fall. The weather is perfect ~ not too hot, not too cold and well, you just want to be outside ALL the time when it’s 70-80 degrees. My workout was Spring Cleaning ALL day ~ I cleaned everything from top to bottom including our ceiling fans and windows. It’s awesome to look around our house now ~ it sparkles 😀
Breakfast: 2 slices Orowheat Light Whole Wheat Bread topped with 1 Tbsp Kettle Cashew Butter (3 pts)
I took a break after scrubbing 2 rooms to have a banana and Cabot Cheese (3 pts)
Lunch was “REAL SIMPLE”. I saw this recipe for Black-Eyed Peas With Bacon and Escarole when I was reading the March issue and knew I had to make it. I used Chickpeas for the Black Eyed Peas and minced my garlic versus slicing it. I have never had cooked escarole but I have to admit I LOVED it! This recipe took maybe 15 minutes to make and you can have it as a side or main dish. I picked main dish for 4 points. Such a deal!
For some additional protein, I had a TJ’s Organic LF Apple Yogurt. I like this flavor better than blueberry – surprising.
2 points a cup and nothing funky just like the other flavors.
Plus 2 Cuties for 1 point for dessert.
My afternoon snack was a Banana Berry Muffin with 1 tsp of melted Cashew Butter “frosting” (3 pts)
After I was finished cleaning our house, I ran to Trader Joe’s to pick up a few things for dinner. I know we honestly have enough food in our house that we can probably survive a month LOL, but, sometimes you just have to go with what you crave. As I was getting ready to walk out, I saw these Potato Latkes. I’ve never have Latkes and have always wanted to try so I picked some up.
3 points for 2 “fried” potatoes sounds pretty awesome to me.
I had planned on saving them for another time but The Husband saw them and was like let’s try. I ended up taking a bite, then, eating an entire one for 1 pt for an “appetizer” LOL. They are interesting to me – doughy like a pancake, but, potato/hashbrown like too. I like them.
As you all know I LOVE my Grill and BBQ year round even in the rain. But, there is something about spring that makes me feel the need to totally BBQ all the time. I have been craving a good burger, so I whipped up some “Works Burgers” sans mushrooms and with Muenster Cheese.
See, even my burger was happy that I made it 😀

I think all my cleaning yesterday definitely earned me a big REWARD today! Today’s goal includes getting a pedicure, doing a little shopping and PLANTING our garden!

Ohmigosh, I am totally doing a spinoff of that recipe tonight using kidney beans & swiss chard!! It tooks soooo good! I’m so excited to try it now =D
And potato pancakes are yummy! I remember my first time trying latkes. I was about 6 or 7, and one of the girls in my Girl Scout troop was Jewish, so her mom came in for Hannukah or Passover, not sure which one, and cooked them for us! Delish, and I still remember them to this day!!

I really need to get some Spring cleaning done but things are crazy around here lately and it doesn’t look like it’s going to slow down any time soon. There are two things I would like to accomplish within the next 2 weeks as far as organization goes so hopefully I can get those done.
