Happy Saturday all! I spent some quality time with my Foam Roller plus stretching with a little yoga this morning to loosen up my hips. I have to say when I first woke up I was feeling my hips, but, after my stretch session, I haven’t noticed them ALL DAY – woohoo! Fingers crossed that tomorrow is an EVEN better day since it’s RACE RUN DAY!!! I know my legs are going to propel my penguin self across the finish line with a smile on my face.

I cannot wait to RUN the Shamrock Half Marathon tomorrow with my SIS! Ok, ok….I am just a “little” excited! On to today and the AMAZING 70 degrees and sunshine weather!
I wasn’t super hungry this morning so I went with a light breakfast. I had a banana with some more spoonable Kettle Dry Roasted Cashew Butter (I am so addicted to this ~ it’s AMAZING!) (3 pts)
Plus a TJ’s Organic Low fat Blueberry Yogurt (2 pts). You know I really thought I’d like this flavor, but, it was just ok. So far my favorites are the Vanilla and Banana – they taste just like “froyo”.
We spent the morning running around town doing a little shopping and running errands. On our way to visit one of The Husband’s friends, I snacked on a few Annie’s Bunnies (1 pt).
My hunger finally kicked in around lunchtime and I was totally starving. I don’t eat REAL BURGERS too often (usually I get a veggie, turkey or chicken burger). But, today, I was completely craving a REAL Burger. We went to a local burger place that The Husband LOVES and I ordered up a delicious burger.
Since I am pretty sure their burgers are not too lean, I compromised and had mine on a “lettuce” bun (saves 4 points and tastes just as good). I had pickles, lettuce, tomato, ketchup and mustard ~ Delicious! (10 pt guesstimate)
All day I was pondering what to have for dinner. I know I don’t technically need to “carbo-load” pre-race since I am not a hard core runner, but, why not have pasta and make it fun. When I was growing up my AWESOME Mom would hold Cheesy Noodle Parties for all of the girls on my softball team before any big game (LOVE her for that! ~ she IS the BEST!!). I think maybe I was missing my momma a bit because I decided this is what I REALLY NEEDED to have 😀
I honestly haven’t had this in years because of the whole processed cheese thing. I LOVE cheese, but, not the stuff that is processed “franken-cheese”. I scoured the Trader Joe’s dairy case and guess what I found.
Look at the stats and better yet – that ingredient list ~ so cool! (1 pt a slice!)
I melted 7 slices with 1 Tbsp of Irish Butter and 1/2 c fat free milk. The sauce turned out perfectly thick and creamy.
I cooked up 6 oz of Capellini Pasta that I picked up at Trader Joe’s too, however, I think I learned the reason why you stick with spaghetti for Cheesy Noodles (Capellini clumps together). I pour the sauce over my noodles, topped with PINK SEA SALT and freshly ground black pepper.
The result although tasty was nothing like my mom’s ~ next time I just need to drive to her house and have her make it. The pasta like “absorbed” the cheese :( I still gobbled it down because honestly who can resist CHEESY NOODLES. 1 cup serving = 5 pts.
While I cooked up the pasta I grilled up some Organic Chicken Drumsticks with TJ’s All Natural BBQ Sauce. I actually LOVED their sauce – it’s smokey, spicy and delish! (3 pts)
Plus some Steam Fresh Veggies topped with garlic salt and pepper. (0 pts)
I made sure to get my “electrolytes” too with a little Gatorade 😀
Did I mention yet that I can’t believe the Shamrock Half Marathon is tomorrow :D. I am SO EXCITED AND NERVOUS all in one. I hope I can rock it so my sis’s first half will be as awesome as she is. My bag is packed and my clothes are ready to go!!!
