Summer Oats with Freshly Ground Almond Butter

Happy Monday all! Today is absolutely flying by ~ time flies when you are having fun, right?! I started my day off with a fantastic bowl of oats ~ this summery blend really made me realize how much I’ve missed oatmeal!

1/2 c Quaker Old Fashioned Oatmeal

1 c water

1 Tbsp TJ’s Berry Blend

1 Tbsp fresh blueberries

Dash of Cinnamon (forgot my flax seed 🙁

All cooked up in the microwave and then I mixed in my favorite toppings.

1 Super Sweet Nectarine

Handul of Blueberries

Sprinkle of unsweetened organic coconut

15 calorie Drizzle of Sweet Cactus Dark Agave Nectar

I LOVE having freshly ground almond butter on a spoon with my oats so that was added at the last minute. All together with a full Nathan bottle (working my water this week) and some Starbuck’s watered down decaf coffee.

Today is going to be super busy and we are back to HOT temperatures close to 100! I plan on heading indoors today to workout at the gym….I am thinking spinning or the Elliptical.

The Husband is taking his mom to lunch today since they both have the day off…He just called and they are having “lunch” at the Indian Casino….so jealous! LOL….

One of my goals this week is to work on using up our freezers and shelf staples…..I am going to be working on some new recipes to get a little creative – starting tonight.

Oh and I cannot wait for dessert – it is one of my favorites that I made this weekend. I will be sharing TWO FANTASTIC summer dessert recipes with you this week so stay tuned for that!

    Your oats look great!

    I am a fan of cleaning out my pantry through cooking every now and then. Really gets the creative juices flowing!

    good goal for the week! i need to use some stuff up as well. i always just buy new.. shame on me. i need to make some almond butter now that i have a food processor!

    Janetha ~ That is totally what I do so I am trying to reel myself in and use what I have. yeah for the new food processor – can't wait to see what you make.

    Beautiful summery oats! I love how much flavor a little pinch of coconut can add to a dish 🙂 Ugh, I hear ya on the temps. I'm leaving for Arizona in 10 days, and it's supposed to be 113 the day we arrive. Gross!

    Anne ~ Thanks, me too. A little coconut goes a long way and it makes dishes look pretty too! Ugh, I feel your pain in Arizona – that it super hot!
