Sunflower Power…

Happy Tuesday all!  Thanks for sharing all you cooking with coffee ideas ~ good and not so good recipes.  I have only baked with coffee once making Tiramisu Cupcakes and I remember that it took a lot of work.  I have always wanted to use coffee in making chocolate cakes or cupcakes because they say it enhances the chocolate flavor. 

After putting dinner in the crockpot to slow cook all day, I whipped up a super cheesy Healthy Eggroll for breakfast.  5 points+ because I used a higher points+ cheese.

Several cups of coffee were consumed while making all of this….ok, just two before I left the house.

Since I knew today was going to be busy, I not only packed up lunch to take with me, but, I snapped pictures too.

Organic Mixed Greens with 1 1/2 tsp. sunflower seeds, 1 1/2 tsp.. dried cranberries and 1 Tbsp. Bolthouse Classic Ranch drizzled on top.  (2 points+)

I doubled my “sunflower power” today by pairing my salad with half a Sunflower Butter and Raspberry Jam sandwich. (5 points+)

My midafternoon snack ~ A Chobani Key Lime Flip (4 points+)

There is something so amazing about those mini white chocolate chips, graham cracker crumbles and key lime…..I didn’t take my time dipping them today, instead, I dumped they all in at once.

I could not wait to get home tonight to dive into the Slow Cooker Pulled Pork and Kale Chips!

Served up a toasted sesame bun. (1/2 cup = 4 points+ and the bun = 3 points+)

Serve up a little BBQ Pork on each side of the bun or put the hat on and dive right in….

After adding some Wickles of course!  The salad was his since he wont’ touch kale chips or admit it when he steals a few.

Yes, I know I am totally weird, but, I crave these crunchy green “potato-like” chips.  1 points+….and I totally ate an entire bunch of organic kale this way…I can admit it Open-mouthed smile

QUESTION OF THE DAY:

What do you prefer? Peanut Butter, Almond Butter, Cashew Butter, Sunflower Butter or ?

I have to say I go through phases, but, I love them all…with Sunflower being my favorite at the moment ~ it tastes just like honey roasted sunflower seeds.

    Just pass the Nutella! LOL Actually, it’s the one food item that causes FIGHTS between me and the hubs. How sad – “you mean you ate the last of the Nutella???” So we have stopped buying it. Nutella is not worth divorce… I guess. 🙂 I also love kale chips. Two out of four kids here like them, too. Woohoo!

    I secretly want cashew butter to be my favorite but when I am really honest with myself it is always crunchy peanut butter. I would be happy eating that by the spoonful forever….

    I love peanut butter! But my new favorite is Cookie Butter from Trader Joe’s! It is so yummy! Thanks for sharing your pictures of all your meals, it is so inspiring!

    I actually like all you mentioned, but if you’d like a real treat, head over to Valley Nut & Fruits web-site and order a few of their specialties…I order from them several times a year: brazil, walnut, hazelnut & pistachio are a few of my favorites! Every time you mention those darn kale chips, I think: man, I need to try them! Maybe on my 5 day week-end coming up 🙂

    I have to admit that I’ve never tried any of them but peanut butter! lol So now I will add sunflower butter to my list of “Danica uses this” things to try!

    Also, just catching up on a couple days of posts. I must find some Wickles! yum!
    And I have a recipe for my mom’s chocolate chip bar that uses a cup of cooled brewed coffee. It was one of my favorites growing up, she always made it for picnics. In fact, I’ll have to make it this weekend.

    I like them all. I like peanut butter mostly but I’ve made fresh almond butter and it is the bomb.com!!!! Eaten right out of the container with a spoon and a few dark chocolate chips on top!

    I must admit, I’ve never tried kale chips. Might pick some kale when I go to the store this weekend! Do you dip them, or put anything on them?

      Here is how I make my Kale Chips. I use nonstick spray or a little olive oil, sea salt and black pepper salt with a little parmesan.

    I love that yogurt too, and I admit, I pour it allll in and then mix it up. So, so good!
    Also, speaking of sunflower, have you tired chocolate covered sunflower seeds? Oh my, such a yummy, sweet treat!
