Happy Wednesday all! This morning The Husband was in charge of breakfast. Little did I know I shouldn’t allow him to have an entire bottle of Sriracha when making Healthy Egg Rolls. He cracked me up when he handed me my plate and said he made me a “Sunshine” to start my day off on a bright note. I can officially say Sriracha Sunshine Egg Rolls are probably about as much heat as I can take in one sitting. (SF + 1 WPA) – 5 points+
He also stopped by the office today to take me to lunch for Healthy Mex at C’ Casa.
I started with a small C Chopped Salad ~ with queso fresco, red bells, pumpkin seeds & creamy cilantro lime dressing. (SF + 4 WPA) – 6 points+
Paired with a cup of their Poblano Corn Soup. I love the combination of smoky, roasted chili peppers with cilantro and corn. I definitely want to recreate this. (SF) – 2 points+
I did steal a few of chips from his White Bean Chipotle Nachos. There were as good as they look.
Dinner tonight was a group effort that came together pretty quickly.
The menu: Cheesy Stuffed Shells without the chicken, Garlic Bread and Caprese Salad
My Sous Chef was in charge of grating the cheese, the noodles and preparing the salad.
I was in charge of the filling and assembling. I combined a container of fat free ricotta with 2 egg whites, 3 garlic cloves, 1/2 tsp. Italian Seasoning, 1/4 tsp. sea salt and black pepper.
Then, added 1/3 of the mozzarella, 1/3 of the parmesan and an entire package of frozen spinach that was thawed and squeezed dry.
Stir to combine and that’s all you need for the filling.
While I mixed the filling, he cooked the jumbo shells in salted water for 9 minutes.
I poured about 1 cup of sauce on the bottom of a 9 x 13 baking dish. Then, stuffed each shell with the spinach ricotta filling.
Cover with the remaining sauce.
Sprinkle with the remaining cheeses.
Bake at 350 for 30 minutes until the cheese is melted and slightly browned.
His salad creation involved a caprese salad with an anti-pasti (said just like that!) in the middle.
I started with one stuffed shell and decided I’d go back for another if I was still hungry.
I figured it was a good compromise as I knew I couldn’t resist having 2 slices of Alexia Garlic Bread.
I did go back for 3 more tomato slices and stopped there as I was satisfied. All together my delicious pasta dinner comes in at (SF + 3 WPA) – 8 points+.
Stats:
In a totally blonde moment this weekend, I managed to mail my Flex Charger to someone….not even sure why I did that. Of course I did not realize it until my battery told me it’s low today.
Sad but a new charger is on the way!

Can you also try to re-create the White Bean Chipotle Nachos 🙂 Those shells looks amazing!! And YES to all Alexia products…my freezer is always full of them! I love the Irish way of having curry over fries…so I get the Alexia new low fat fries and cover them with chicken curry…just awesome 🙂

The stuffed shells look really good. However, with just my husband and myself there would be way too much left over even if we both ate two shells. I’m going to try cutting the recipe in half because these look too good not to try.
Danica, That looked like thick balsamic drizzle on the tomatoes. Been looking for it, but not finding. Where do you get it, please?

. . . and a question I forgot to put in my previous point. I notice that you use the FitBit Flex to track activity. Do you use the Flex to figure out APs or do you use it only to record your general activity levels?
