Super Easy Homemade Lemon Sherbert

Happy Weekend all!!!  What a whirl wind the past 2 days have been, but, in a good way.  One of my great friends bought her very FIRST house ever and we wanted to do a few fun things to help her out.  We spent all of Friday night after work there and all today.

Let’s just say, I moved a ton of stuff, painted, and officially mowed 5 lawns today (including 2 lawns with weeds as high as my thighs).  I have the blisters on my hands to prove it.  No, she doesn’t have 5 lawns LOL, we did 2 of hers, then, I did our front and backyards and figured while I was at having my temporary landscaping business, I’d go over and do The Husband’s Moms too.  I might have been a little OCD with the lawn mower, but, hey, at least I burned a TON of calories 😀

I owe you all twos days of recaps so here it goes…..

FRIDAY

I have been craving these Parmesan Almond Crisps ever since the first day I made them and The Husband decided he liked them too ;)  I whipped up another batch at 6 am ~ they cook fast :D  Of course I had to sample one….SO GOOD! (1 pt)

Then, I moved on to my breakfast veggie of the day ~ Yellow Bell Pepper Strips.

I couldn’t really decide what sounded good to eat (probably because I was so tired!) so I took a pack of Trader Joe’s 97% FF turkey bacon to work and cooked up 4 pieces. (2.5 pts)

Mid morning ~ The Usual ~ nectarine & a string cheese!  The answer because it lost it’s bark (sad LOL).

Lunch started off with this delicious salad topped with Newman’s Light Lime Vinaigrette. (3 pts)

A HOMEMADE BY ME FROZEN DINNER ~ I froze a few pieces of my Spinach & 4-cheese Lasagna for times like Friday when I had NOTHING ready to eat.  It was just as delicious! (7 pts)

Earlier in the week, I whipped up some LEMON SHERBERT for my friend who came over to enjoy the Slow Cooker Taco Casserole with us.  I brought the leftovers to work for everyone to share….it’s so easy to make your own sherbet..

This recipe is super light, refreshing and VERY lemony.  The buttermilk adds a layer of richness to offset the tang and I LOVE that!

Lemon Sherbert

LEMON SHERBERT

2 cups Low-Fat Buttermilk

Zest of 1 lemon

Juice of 1 lemon

2/3 cup Agave Nectar

Stir everything together to combine.  Freeze according to your ice cream maker & enjoy

Makes 6 1/2 cup servings, 2 points each

Probably the BEST Chipotle Bowl I’ve ever had ~ it could’ve been the fact that we ate dinner so late though.

GUACAMOLE because it’s totally worth ALL the points to me.

This salad game in at 10 points (not too shabby because it tasted like more).  You can save 3 points by skipping the guacamole, but why would you??? I <3 Guacamole!!!

SATURDAY

We were up bright and early, but, I made sure to take the time to prepare a filling breakfast that would “stick to me” all day.

I realized my “eggwiches” do not NEED 2 slices of bread so I took one, added my “fried egg” and cut it in half.  It was perfect! (3 pts)

We stopped for lunch at Port of Subs which I haven’t been to forever, I am not sure why.

I was so Hangry and really wanted a BIG Ole Sandwich, but, I wasn’t sure how that would fit with my 2 cups of veggies at lunch September goal.  Then, as I was drooling over all my options, I got the idea to have my sandwich as a salad!

BEST IDEA EVER ~ it made a HUGE SANDWICH SALAD WITH EVERYTHING! (7 pts)

Jalepenos ~ why haven’t I ever had these on my salad – they were awesome!

Olive Oil, Red Wine Vinegar and Black Pepper

Believe it or not, my salad kept me full for almost 7 hours ~ AWESOME!

I was pretty much spent by the time we got home so much so I couldn’t even fathom going out to pick up take out LOL.  So, what’s a girl to do???

Whip up Vegetable Loaded Spaghetti over Whole Wheat Pasta since it’s so easy to make and honestly faster than getting take out! (1 cup each – 7 pts))

I can tell I was tired & hungry putting my plate together because I pretty much just dumped it all on there, took my pictures and was like “tadah, all done, now I can EAT!” LOL

I am SO glad tomorrow is an easy day even if we have a few things to get done.  I have a feeling I am going to be so sore tomorrow ~ yard work and painting always make you use muscles you don’t usually use…don’t you think?!

    Those little crackers look amazing! Lemon sherbet made my mouth water.

    Soooo jealous you have a TJ. That sausage needs to be in my fridge!

    So, what is a tree’s favorite drink???

    MMMM< I LOVE that sausage - Aidell's is close but not quite the same - TJ's is more savory sweet/maple like. The answer......"root" beer LOLOLOL! Danica

    Holy recap! hehe

    I love when I have something I made myself fresh from teh freezer. You get the convinience of ready made, but you know what went in it. These meals are the BEST bc all you do is heat ‘n EAT 😉

    Must grab some of those sausages at TJ’s. Haven’t seen them before, but they sounds delish.

    Had to tell Brian the root beer joke… he rolled his eyes ;P

    you keep making those almond cheese things and i keep wanting to eat them. i have both ingredients at home, i always forget and then i see them again! i need to make them. i had a chipotle bowl over the weekend, too! they are the best.. love their guac. your weekend was full of good eats! yum!
