Happy Saturday all! This morning I made my first ever Photo Collage using Picasa on my Droid Razr Max. I have always wondered how everyone puts them together on Instagram and now that I actually “looked” into it ~ it was so easy and I love the result (yes, The Husband is totally laughing at my rainbow borders, but I don’t care ~ I like them ~ rainbows and all!)
I also made one of the most delicious breakfast hashes I’ve ever made. I woke up starving and really wanting to have something savory. I was trying to convince myself that I did not “need” to have a Healthy Egg Roll for the 5th day in a row. It helped me decide when The Husband asked for an Egg Roll and we only had one tortilla left.
The other thought I had as I rummaged the fridge and freezer was to have these Alexia Sweet Potato Puffs…..but, I realized having Tater Tots for breakfast wouldn’t exactly be the "mature” thing to do
I pulled out some bell peppers, red onion and sweet potato figuring I’d just “fry” them up to make hash browns.
I heated a medium nonstick skillet over medium heat, sprayed it with nonstick spray and added 4 teaspoons of olive oil. After adding my potatoes, peppers and onion, I sprinkled them with sea salt, black pepper and paprika, then, “fried” them for the next 15 minutes, flipping every 3-4 minutes.

I wanted to balance out my Sweet Potato Hash Browns with some protein so I added a “fried” egg.
Cooked over easy so all that delicious yolkiness could be mixed in with my sweet potato, pepper and onion goodness.
This totally hit the spot and kept me full for 5 hours. Did I mention it’s 100% Simply Filling and just the right amount of delicious?! 6 points+
Today we hosted the business luncheon for The Husband where he has the chance to meet up with all the Casino Chip Collectors to trade and sell chips. We took over the big party room at Round Table Pizza who did a fantastic job at decking the place out for Halloween.
I love the hanging body parts on your way to the bathroom.
I started off with really good intentions to make one gigantic salad and chat it up with the other wives in the club. I pretty much put the entire salad bar on my plate with ranch on the side.
(SF + 4 WPA for the sunflower seeds, croutons & ranch) – 6 points+
Then, the Restaurant Manager came over to me with this huge Flat Bread Veggie & Chicken Pizza and said I heard you are someone who likes to eat and write about healthy foods. (How did she know?!) Then, she said, you need to try our new Artisan Pizzas that were featured on Dr. Oz. She said they made it just for me to try even though I didn’t ask for it.
I had a slice of the Roasted Veggie & Mozzarella. This might be my new favorite pizza ~ The crust is light and crunchy, yet, flaky and the veggies, garlic, tomato, basil and balsamic drizzled on top make this one healthy, tasty slice of pizza.
The stats are pretty great too ~ only 4 points+ a slice.
The Husband did bring me over a small slice of Veggie Pizza and…..
….a cinnamon roll twist which I didn’t exactly turn down either. Overall, I am proud of my choices given that it was an all you could eat pizza, salad and breadstick buffet. I could’ve easily don’t a lot more damage, but, I stopped here.
I decided I wanted to listen to my body to see if I actually got hungry for dinner. All I really wanted was a big apple and some grapes so I went with it to balance out my day.
I am excited for our Halloween Celebration at my Weight Watchers meeting tomorrow. I am getting up a little early just so I can contribute making Homemade Pumpkin Frozen Yogurt to go with all the goodies….the recipe, my weigh in & weekly menu coming up tomorrow along with that giveaway if I have time to post it all!

That roasted veggie pizza looks good. I think I’ll have to try and make one this week. I hope your weigh in was better than mine. I had a stressing week and snacked my way through, up 1.8lbs!!!

You know we all have weeks like that ~ the most important thing is to learn from it, move on and get right back on track with the next meal/snack. It’s all about the journey and finding ways to make this your lifestyle ~ stressful weeks will happen and that is ok. I have no doubt you will turn that loss around next week.

That hash looks divine! Why can’t I get the hang of SF??? I am so disappointed in myself…I start the week with good intentions, then go back to P+ in a day or 2…I think I just need to write down a menu for a week and stick to it!

Hi Gail,
That’s ok – just take it one day at a time. Maybe try adding in one day for a week, then, two days, then, three and before you know it, you will be doing it 100%. It’s ok to use your WPA for those non-Simply Filling foods you enjoy. Just count them against it and do not let it throw you off track.
I do find having a plan does help, but, eventually you get into a swing of things and it becomes easier.
