Hi all! Today was another Turkey day. On my way in, I saw this Turkey family peaking in our office windows. They are so cute and fun to watch. It was another early morning so breakfast was a repeat of yesterday. Sandwich Bros Turkey Sausage, Egg White Flatbread (4 sp), cherries.
I debated on my drive in and decided I needed a Starbucks. Grande Iced Nonfat Latte with caramel on top. (3 sp).
My super funny co-worker told me today, she was going to bike to UPS today at lunch which is right next to Wok of Flame. I offered to drive and of course, she said yes, yes….we are both so addicted to this place.
She introduced me to something I’ve never had before – Spicy Garlic Edamame…. amazing! It adds a whole other garlicky flavor to zero point edamame.Of course Potstickers were on the menu and I had 3 for 5 sp.
Won Ton Soup (2 sp).
I felt so proud not ordering chow mein as I knew I’d eat it all. I have no problem passing up rice.
I ate all my Kung Pao Chicken (8 sp) with steamed veggies only.Dessert was my fortune cookie for 1 sp.
I chose to walk to the post office to mail a package for work today versus drive.
On my way, I spotted the Turkey family again. I cannot believe she has 9 babies.
It made me realize I do not know what baby turkeys are called. My late afternoon snack was watermelon and a banana. I actually waited until I was hungry 6 hours after lunch and 3 hours before dinner.
I made this Chrissy Teigen Sweet & Sour Chicken Lettuce Wrap recipe for dinner tonight.
This recipe actually comes together quickly.
Whisk together Sweet Thai chili sauce with rice wine vinegar, Hoisin, sriracha, and 1 tsp sesame oil to create the Sweet & Sour Sauce.
Brown zero point ground chicken breast in a little olive oil. Season with salt & pepper then coat with 3 Tbsp of Secret Sauce. Set aside. To the same pan, add garlic, ginger, green onion, mushrooms and sweet peppers. Cook until softened, about 4-5 minutes.
Remove from heat. Return the chicken to the pan, toss and serve.
I made 2 lettuce cups – one with 1/4 cup steamed rice and one with the meat mix only, drizzled with extra sauce. The verdict, I love it both ways with the rice making the wraps more filling.
These are super refreshing, sweet, spicy, crunchy and salty. I’d definitely make these again and I might have to look out for Chrissy’s new cookbook (4 sp).27 Daily WWFreestyle Smartpoints, 15K steps
Night all!
A baby turkey is called a poult. So, that must be how ‘poultry’ came to be.
