Hi all! I was totally tempted to throw “Dos” in my title as today involved tacos X’s two making for one delicious day. I only wish I started with a Healthy Eggroll too so I could’ve said Tres Tacos! I know, I am a total dork, but I’m ok with it especially when I get to share in the fun with you all….but more on that in a few.
Breakfast repeats – Eggwich & berries (3 sp)I picked up a Starbucks for my coworker who was a rough morning and I had a grande iced Nonfat Latte with caramel on top.
It was such a beautiful day outside that I totally accepted the invite to dine Al Fresco at Tres Hermanas. (HA! I did just find a way to use Tres lol).I did devour some chips, salsa and this starter salad with ranch. (6 sp)I had one grilled mahi mahi taco with mango salsa, beans & rice (8 sp)Our dinner tonight came together in minutes thanks to Hello Fresh!I pretty much followed the recipe for the Southwestern Beef Tacos with Lime Crema using alot less oil.Prepping all the veggies is the longest part.Get fancy by whipping up a Lime Crema. Sour cream, like zest, like juice from 1/4 wedge, salt and pepper.Make sweet and tangy pickled jalapenos by tossing in the juice of one lime wedge with a little sugar and salt.Then, the cooking begins. I “fried” my sliced bell pepper and onions in a little avocado oil for 5-7 minutes until slightly charred. Season with salt & pepper then set aside.In the same pan, add the diced onion, jalapeno and taco seasoning.After cooking for 30 seconds, add the beef and brown until cooked through. Season generously with salt and pepper.Heat the tortillas in a damp paper towel for 30 seconds then build your tacos – lime crema, veggies, beef, a little cheese, jalapenos and cilantro. Squeeze lime and dive in.
I love everything about these tacos. They are packed with flavor from the zesty lime, smoky beef, sweet veggies and creamy sour cream. The soft tortillas make everything melt together.
