We somehow seem to have a ton of tomatoes to use up. I have two favorite ways I LOVE to use fresh tomatoes from the market. The first is in homemade pasta sauce ~ think tomato, basil, garlic, olive oil ~ YUM! The second is in salsa. Tonight I whipped up a batch of Salsa Mexicana using 2 heirloom tomatoes, 2 orange tomatoes and a few cherry tomatoes. The results were pretty fantastic. I am definitely seeing salsa eggs in my future!
Ok, that was about the only fancy part of tonight’s dinner 🙂 I whipped up some tacos for a quick and tasty dinner. The Husband actually was shocked and way too happy that I used Trader Joe’s 96% lean beef versus ground turkey. It’s what we had in the freezer so in keeping with using it up, I had to 😀 LOL….
I started off with a little Salsa Mexicana topped with Avocado.
I really think that whenever you make tacos that you need to make a cheesy quesadilla too. I took two corn tortillas and topped them with pepperjack cheese ~ The Husband got 1/2 and I got 1/2 – cheesy good!
I had TWO soft corn tacos.
96% lean ground beef seasoned with my FAVORITE homemade taco seasoning & cooked with orange bell pepper and onion
Salsa Mexicana and AVOCADO!
A sprinkle of Tillamook PepperJack Cheese
All together it was a fun dinner to eat ~ I LOVE it when my plate is full and I get to work my way around to eat it all. Maybe I have outgrown beef because it didn’t taste as good to me as ground turkey, chickpeas or black beans….surprising!
For dessert I had a Peppermint Patty.
Now it’s time for Shark After Dark! Yup, I am STILL hooked on Shark Week! LOL. I think I may attempt to crack open my Amazing Adventures of Diet Girl book too!

I wish I could find pretty colored tomatoes around here….All I seem to find are the pale red, greenhouse raised, flavorless ones! Yuck!
