Ten Minute Tortilla Soup, 4 points+

Happy Wednesday all!  I am glad you all love the Bacon T-Shirt as much as I do on this week’s Wordless Wednesday.  How awesome would that be to wear the bacon “exercise” shirt to the gym?! LOL.  I totally fell in love with that shirt and couldn’t resist posting the picture when Staci sent it over to me.  Thanks again for thinking of me Staci and sending it over.  I am not sure where she got the shirt, but, will ask and let you all know.

When I woke up this morning and went out to grab the paper, our Farm Fresh To You Organic Produce Box was waiting on our door step!  Seriously….this is one reason I love Wednesdays!

We are totally stocked up on fruit ~ Mandarin’s, Oranges and super crisp Gala Apples.

Plus two amazing smelling sweet Meyer Lemons.  I totally think these 1 points+ Meyer Lemon Sugar Cookies are in our future.

The Husband’s favorite ~ Mandarin Oranges that are just as easy as cuties to peel.

Leeks for this Roasted Cheesy Cauliflower and Leek soup I plan on making and a few more carrots to sneak into The Husband’s smoothies and soup Open-mouthed smile

Last, but, not least, a Butternut Squash! They included this tasty sounding recipe for a Butternut Squash Swiss Chard Hash that I may have to try.

This morning nothing sounded good for breakfast at all….except an egg roll but we were out of eggs.

So, I settled for a banana and a grande, Nonfat, Decaf Latte with Caramel drizzled on top – 3 points+.

The Husband surprised me by showing up to take me to lunch today.  We headed over to his favorite place, Buckhorn….although, I “almost” go him to venture out to try Kabobs….

Yik Yak Salad with Chicken ~ Mixed greens, cabbages, crispy pasta, cilantro, green onions, jicama, red peppers, snow peas, tossed with sweet sesame dressing & topped with toasted almonds.  I only managed to eat about half of it ~ this salad is huge. (8 points+)

I couldn’t wait to get home tonight to make the Vitamix Tortilla Soup I have been wanting to try all week long.  This took maybe 15 minutes to make and I never had to turn on the stove!  The part The Husband doesn’t know is that it’s packed with all kinds of veggies and is 100% vegetarian.

I am going to create a new category on my recipe page just for the Vitamix recipes I make.  You do not necessarily need a Vitamix to make them so I will try to notate that as well.

TEN MINUTE TORTILLA SOUP (Print it!)

INGREDIENTS:

  • 2 cups vegetable broth
  • 2 cups roma tomatoes, about 4, quartered
  • 1 celery stalk, quartered
  • 1/2 cup carrots, quartered
  • 1/2 onion, chopped
  • 1/2 red bell pepper, copped
  • 1 garlic clove, minced
  • 1 jalapeno, seeded and quartered
  • 1 Tbsp. Taco Seasoning
  • 2 Tbsp. cilantro
  • 1 cup corn
  • 1/2 cup black beans, drained and rinsed
  • 2 oz. reduced fat sharp cheddar cheese
  • 1 oz. tortilla chips

INSTRUCTIONS:

1. Combine the vegetable broth through taco seasoning in your Vitamix or blender.  If using a Vitamix, select the soup setting and/or blend on high for 8 minutes or until hot.  If using a blender, blend until smooth, about 1-2 minutes.

2.  Add the cilantro through tortilla chips and pulse 3-4 times, just enough to slightly mix everything into the soup, but, still leave a nice, chunky texture.  If using a blender, transfer to a stove and heat until warmed, about 5 minutes.

3.  Enjoy as is or serve it up with your favorite topers ~ cheese, chips, jalapenos, sour cream, avocado, olives…..the options are endless!

Makes 4 servings, about 1 1/2 cups, 4 points+ per serving, Simply Filling + 1 WPA

STEP – BY – STEP:

Simply put everything in the blender in the order listed above starting with the broth.

Select the hot soup setting or blend on high for 8 minutes.

Add the cheese, chips, corn, black beans and cilantro.  Pulse a few times just until slightly mixed in but still chunky.

Tadah!!!  Super thick, creamy, hot, tortilla soup and I never turned on the stove!  I totally pulsed mine too much….but, I am still learning how to use that kitchen “power tool”! Open-mouthed smile

Add all your favorite toppings and dig in!  I used the extra toppers that were in my soup on top with a little avocado and pickled jalapeno.  Served up with more tortilla chips on the side for dipping.

    Oh geez I can see a new VitaMix in my future..I had one over 25years ago…bought it when I was on vacation in Atlantic City…they were demonstrating it on the Boardwalk in a little booth 🙂 Gave it to me son a few years ago and it’s still going strong!! I do like crunchy most times for toppings, but also sometimes a sprinkle of low fat cheddar is good!

    Ok that salad looks amazing. Also, I am incredibly jealous of your hot soup making Vitamix. I don’t really make soup that often, but when I do it’s topless.

    I’m very excited about the Vitamix recipes! I have the exact same one you do and have so far made both soups and smoothies. You should try the loaded potato soup! Yes, I agree with you… love crunch and if I have something on hand I definitely add it on top of my soups.

    The Vitamix has a hot soup option? How cool! At first I was wondering how you made soup without the stove.

      Yes on the preprogrammed ones you can just set it to the soup option and it takes I think about six minutes and it’s done. You can even make homemade hot chocolate in it and you just put on the suit timing and it is done and it hot and everything

    Danica, Can’t wait to try this. Do the chips, cheese, and sour cream count as additional points, or is the recipe 4 Points + including these ingredients? Thanks!

      Hi Vonda,

      I included the chips and cheese that I blended in the soup in the 4 points+. Any additional toppers count as extra points+.

    I am a big fan of soup toppers with texture too! I made a batch of butternut squash soup the other night, and I topped it with Greek yogurt and pumpkin seeds. It was pretty delish!

    I can make that same soup in my Blendtec – so easy and delicious! I top Mexican style soups with light sourcream, cilantro and chopped avocado.

    Watching the vitamix rep at Costco demonstrate this soup made me buy the vita mix. I love mine, although I have an older model I got from QVC. I use it at least 4 times a week.
