The Easiest Stuffed Mushrooms you will ever make

HAPPY NEW YEAR EVERYONE!!!  My post tonight is going to be a “quickie” so I can get to the fun and games celebrating the New Year Smile

Breakfast was a delicious 6 points+ Pumpkin Walnut Muffin with a Banana.

The Husband and I decided to be hard core “gamblers” by taking a road trip to Cache Creak (one of our local Indian Casinos) and we figured we NEEDED to beat the crowds by arriving at like 10 am Winking smile.

Just a tall nonfat decaf latte for the road (2 points+)

We had fun playing slots, black jack and 3-card poker (quite possibly my FAVORITE game).  We broke for lunch and headed over to the Café for “breakfast”

I didn’t eat the hashbrowns, but, I did eat both pieces of dry whole wheat toast (4 points+)

After “re-fueling” we decided that we needed to give it one more shot.  I am so glad The Husband convinced me of that because I WON 10,000 PENNIES!!!  AWESOME!

More snacks from my purse (Trader Joe’s Individual Cashews).  I shared my bag with The Husband 3 points+ for half.

The Mummy Returns

On our way home we were trying to decide what to have for dinner.  We both agreed New Year’s is fun when you have BBQ and appetizers.  So, we picked the best of both worlds.  I have only made “stuffed” mushrooms one time before and I sorta cheated.

STUFFED MUSHROOMS

Easy Stuffed Mushrooms

INGREDIENTS

24 small button mushrooms, 2 containers

2 tablespoons butter

4 large garlic cloves, minced

1/2 cup Italian bread crumbs

1/2 cup Panko Bread Crumbs

2 Tbsp. fresh basil, chopped

1 tsp crushed red pepper flakes

4 tablespoons freshly grated Parmesan cheese

1 egg white

Sea Salt and freshly ground pepper to taste

INSTRUCTIONS

1.  Preheat oven to 350° F and spray a large cookie sheet with nonstick cooking spray.

2.  Melt the butter in a medium skillet over medium heat. Add the garlic and sauté until softened, being careful not to brown. Add the breadcrumbs, chopped mushrooms, basil, crushed red pepper flakes, sea salt and pepper. Sauté until bread crumbs are slightly crisp and golden. Add the Parmesan cheese. Mix well.

3.  Remove from heat and allow to cool slightly.  Mix in egg white.  Spoon the breadcrumb mixture into the mushroom caps, packing in firmly. Place on baking sheet bake until mushrooms and stuffing are heated through, about 20-25 minutes. Serve hot or room temperature.

Makes 6 servings, 4 mushrooms each, 4 points+ (1 POINTS+ EACH)

STEP-BY-STEP

“Pop” your stems out of your mushrooms, reserving the stems and setting your mushrooms aside.

Chop the mushroom stems and basil.

Measure out your Italian Bread Crumbs and Panko Bread Crumbs.

Melt butter and add garlic.

Add mushrooms, basil, bread crumbs, crushed red pepper flakes, sea salt and black pepper.  Cook until the bread crumbs are slightly golden.

Remove from heat, stir in 1/2 of the parmesan and allow to cool slightly.  Stir in Egg white.

Then, use a spoon to “stuffed” your mushrooms, pressing them firmly.

Sprinkle with additional parmesan because you thought the CHEESE should be on the outside too Smile

Bake at 350 for 20-25 minutes until heated through.  I honestly LOVED them…they were crispy on the top and the flavor of the garlic/butter/basil reminded me of garlic bread.  The Husband said he isn’t used to “crunchy” stuffed mushrooms.

It may seem like an odd mix, but, dinner was AWESOME and everything that sounded good.

    Hi Danica,
    I just checked my individual cashews from Trader Joe’s, and they came up 6 point plus. Are there more than one kind?

    Nope. there is only one type that I know of. I actually split my bag with The Husband, but, forgot to note that above. I will add it now. 🙂
