The Holiday Feast

Merry Christmas Everyone!  I hope you all had a wonderful holiday filled with family, friends, fun and a whole lot of delicious food.  The Husband was like a little kid all night long…as in he woke me up at 2 am and asked, “Is it time to open presents yet?”  Then, at 6 am….”are you sleeping? Santa stopped by”….It is honestly the only day of the year that I think he gets up before I do lol.

After our present unwrapping frenzy, I whipped up a “fried” potatoes with peppers & onion, scrambled eggs and turkey bacon for breakfast.

I actually planned our day so we would eat breakfast with snacks for lunch and lunch with his family for dinner.

Garlic stuffed green olives, pickled veggies, marinated mushrooms and wheat thins with artichoke jalapeno dip.

My healthy go-to appetizer ~ A veggie tray or if the fruit looks good, a fruit tray.

I totally blame my Weight Watchers buddies for introducing me to Merlot BellaVitano Cheese ~ It’s made with Merlot Wine in it that you can taste along with the sharp cheddar/parmesan flavors.  It’s so creamy and addictive.

Throughout the afternoon, I made up 3 snack plates with a focus on the 0 points+ stuff….

I have been waiting all month long for this dinner….I make it once a year just so I can make Navy Bean and Ham Soup…..oh, and it is all of my favorite things (mac ‘n’ cheese aside).

SIMPLE GLAZED HAM – (SF) – 4 oz = 4 points+

HEALTHY AU GRATIN POTATOES – 5 points+

HONEY BALSAMIC ROASTED BRUSSELS SPROUTS – (SF+2 WPA) – 2 points+

GREEN BEANS WITH CARAMELIZED ONIONS & BACON – (SF+ 1 WPA) – 1 points+

See what I mean?!  This year, we also had The Husband’s Gran’s Mac Salad which was tasty too.

I made these Very Lemony Pudding Cakes from my Weight Watcher’s Just Desserts Cookbook a few years back for the 4th of July and everyone loved them.

I love that you get to eat the entire dish (they are served in ramkins) for 4 points+!  These pudding cakes are creamy like pudding, yet, fluffy with the perfect amount of buttery, sweet, lemon tang.

I know I am incredibly behind on your comments, emails, etc.  I am hoping to catch up by next year – LOL…ok, ok, this week!

For now, I am off to play with my new Christmas Gadgets ~ The Husband bought me a new Canon Powershot Elph 110HS Point & Shoot Camera to replace my oldie, but, goodie camera.  I am actually excited to use it!

    Merry merry Christmas! I’m back to WW this week bc I’ve been MAJORLY slacking and MAJORLY eating (15+ lbs worth). Hubby and I have developed terrible habits once I went back to work, but I know I can find my mojo again. Thanks for always being a great inspiration.

    Looks like you had a great Christmas! LOVE your idea of snacks! Just picked up a copy of that WW cookbook…one I didn’t have…shocking lol! We love lemon so those little cakes are right up our alley! I’m hoping to lose a few lbs. this week and then in full swing next week! I actually spent some time early yesterday morning reading over all the new WW material on-line. I’m a psychiatric nurse by trade, and just LOVE how WW is so geared towards enforcing and changing behaviors!! Lookin forward to seeing some great pics with your new camera!

    Got some fabulous slippers you microwave to heat them up to keep my Michigan frozen feet toasty warm. They have lavender in them for heavenly aromatherapy.

    Danica, where are the hubby’s present pictures!! I want to see why he was waking you up at 2:00am in the morn! LOL! I received an authentic set of Clark Griswald (Christmas Vacation) Moose head eggnog glasses! LOVE THEM 🙂 Hope your holidays continue to be fabulous!

      You know, it wasn’t anything fancy this year and definitely nothing that he knew about, I think 🙂 Just tools and such from Home Depot and clothes….but, he is just a big kid. I love it when he gets all festive even singing along with Christmas music…it’s so funny. You totally should ask him about it on Sunday 🙂

    My best gift was my grandgirl (teenage) saying this was the best Christmas ever. Times have been lean and mean and presents were few and far between, although I managed to barter a piece of jewelry for her.

    A quilt made by my dad’s mom (we call her Granny). Handmade gifts are always awesome, but this one is one I will forever cherish. She told us all not to open them until she gave them all out. Her voice cracked when she told us that she had been working on them for over a year. She said she wanted to make something special for us to remember her by (like we need anything to ‘remember’ her by). She made one for each child (my dad, aunt and uncle) each grandchild (there are five of us) and one for her great granddaughter – my daughter. My daughter had to have it when she went to sleep last night 🙂 – she’s four. It just made my heart melt and brought tears to my eyes!!

    Oh, and my Paula Deen cookware isn’t too shabby either!! 😉 (I have amazing in-laws!!)
