Happy Monday all! This morning I really didn’t want to get up ~ it was dark, cold and well, staying in bed wide awake sounded much better than facing the treadmill. I even pondered crawling back into bed after I finally got up. But, I didn’t cave or give in ~ instead, I told myself, just get on the treadmill for 10 minutes.
I can do anything for 10 minutes and if after 10 minutes I still want to get back in bed, then, go for it. The thing is, once I got going, I didn’t want to stop. I spend 37 minutes get my jog/walk on and definitely started my day off on the right note.
I love that my first meeting of the day was a breakfast meeting….I also think that anytime someone schedules an early morning meeting on Mondays ~ they should bring a breakfast this good! lol

I know you all will be shocked to hear me say this, but, the creamy, green salsa they served up with it was actually too HOT for me…I ended up dumping it all over my omelet then scraping it off ~ oops!
Lunch involved more of my Creamy Coconut Kabocha Squash Soup with Corn Salsa. The fresh corn salsa completely makes this dish. (SF+1 WPA), 4 points+
Served up with Rainbow Broccoli Salad topped with 1 Tbsp sunflower seeds and 1 Tbsp Trader Joe’s Low-Fat Spicy Peanut Vinaigrette (SF+2 WPA) – 2 points+
I got in even more steps this afternoon by heading out with my co-worker for an afternoon coffee. I totally couldn’t wait to check out my progress on AL when I got back knowing I was already at 100%!
Grande Iced Nonfat Decaf Latte with Caramel Drizzled on top (SF) – 3 points+
Since I knew we would be having a late dinner, I snacked on a pluot and light string cheese on my drive home (SF) – 1 points+
When I pulled into the drive way, I said “HI!” to The Husband’s latest addition to our pumpkin family.
He bought the little straw boy so the girl would have someone to play with all day long.
Seriously….it is the little things. No matter how good or bad my day is, this makes me smile every single time I walk in the door!
I also had some fun mail from the folks at Quaker Oats. They sent me a big care package of all the new products they are in the process of launching this year to review – fun!

The Husband also decided to work on round two of making BBQ Pork Ribs on the Bone.
We totally owe Carol B for her fantastic suggestion on how to make these ribs. She recommended seasoning the ribs, wrapping them in foil and baking them at 275 for 2 hours and 15 minutes.
The Husband couldn’t wait to he got up early this morning to “bake” them. He put them in the fridge, then, unwrapped them right before putting them on the grill. This method allows you to remove practically all the grease, but, it keeps the ribs tender.
Grill for 20-25 minutes flipping/turning then baste for 5-10. Slice, dig in and enjoy ribs that literally fall off the bone!
I had 3 ribs, about 5 oz with the sauce. (Simply Filling Like) – 6 points+
I was in charge of both sides while he cooked the ribs. I “fried” some potatoes with peppers, onion, garlic salt and pepper. (SF) – 4 points+.
Then, made grilled squash foil packets topped with garlic salt, black pepper and ICBINB spray.

I have tried the Stila bars. They were pretty good… a tad sweet, kinda crunchy. Anyway, I would buy them again to try. One of my 4 kids liked them, too. We love the yogurt bars. They come in vanilla, strawberry, or blueberry for now. I have seen both those cereals at our Publix in the last month, and I just saw the choc chip oatmeal the other day for the first time but was scared and steered clear. LOL Things like that are addictive for me!

Hi Kim,
I heated a large nonstick skillet with 4 tsp Olive Oil, then, I “fried” the potatoes with peppers, onion, garlic salt, paprika and black pepper, turning about every 3-4 minutes for 15 – 20 minutes until golden brown.
It’s a great way to get in your 2 tsp of healthy oil.

Here is another easy way to make the ribs on the grill. Take you ribs and tear off enough heavy duty foil to wrap them in a double thickness with only one seam. Before sealing ribs in foil put about 4-5 cups of ice cubes on top of the ribs. You will have to make sure you have enough foil to gift wrap them with the added ice cubes. Pop onto the grill for about 2-3 hours depending on type and weight of rib. They will actually steam and bake for a tender and moist texture. Remove from foil (be careful of steam) and grill with whatever type of seasonings/sauce you desire. Ribs will be delicious and tender. You can still season a day ahead of time and they ice and wrap them for the grill. Enjoy 🙂

Hi Tonya,
Here is how he made the ribs. He sprinkled them with a rub mix he made up, then, wrapped them in foil. Place in a baking dish and cook in the oven for 2 1/2 hours. You can do this the night before or in the morning. Then, before serving, cook them on the grill for 15-30 minutes basting in BBQ sauce for the last 15 minutes.
Pretty easy, huh?
