Happy Wednesday all! This week is flying by and I am totally enjoying it all. The weather, my workouts and delicious eats. Today’s meals were so tasty and satisfying that no snacks were required!
After knocking out a 36 minute C25K jog/walk this morning, I whipped up exactly what I woke up craving for breakfast.
French toast & Sausage!
2 slices Nature’s Own Butter Bread dipped in an egg mix (egg, splash of milk with dashes of vanilla, cinnamon and salt). I topped my toast with 1/2 Tbsp whipped butter and a 1 Tbsp drizzle of pure maple syrup. I served it up with 3 Aidells Chicken Apple Sausage for 11 Smartpoints.I managed to squeeze in a 40 minute walk at lunch on a new trail before diving into today’s salad.
Greens, carrots, tomatoes, 1 Jarlsberg Mini Swiss cheese, 3 oz buffalo chicken, a hard boiled egg and 2 Tbsp ranch (4 sp). I had 2 cuties for dessert.We made a spin on this Cooking Light recipe for Tortellini, Chicken & Arugula salad for dinner tonight. You all have to make this – it comes together so quickly and is packed with flavor. There are also only 4 items in the entire recipe with points to count.
Here is how I made our salad.
Cook 1 package of Tortellini according to the package instructions.While the pasta cooks, whisk up the dressing, zest your lemon and slice your shallot. To the dressing, I added 1 tsp Italian seasoning and the juice of an entire Meyer Lemon.
You could use leftover chicken, rotisserie chicken or grilled up a few chicken breast tenders.
Toss the tortellini, chicken, shallot and lemon zest together with half the dressing.
Add arugula and the rest of the dressing.
Plus a little shaved parmesan – toss and serve. This recipe makes 4 big servings so start with 1 cup and decide if you want to go back for more.
The lemon comes through with the arugula, garlic and shallot adding a bit of spice. But the fun part of this dish is biting into those cheesy Tortellini while the chicken fills you up. I think sun dried tomatoes would make this even better.
