Happy Sunday all!!  I have partnered with my friends at Kodiak Cakes (the best flapjacks around!) to thank you all for being so patient during my busy work schedule and waiting for me to bring back my daily posts.  As some of you know, in our house, we never eat pancakes ~ only Flapjack’s and Waffles as The Husband does not like pancakes.  It’s ok, I NEVER tell him we are having pancakes of any kind and he really does think there are separate mixes flap jacks, pancakes and waffles lol.

As much as I love being able to whip up flapjacks from scratch, on weekday mornings, it’s nice to have a quick option that let’s me get a filling, delicious and healthy breakfast on the table in under 15 minutes ~ Enter Kodiak Cakes!

My all time favorite mix to date is the Whole Wheat, Oat & Honey ~ slightly sweet, slightly nutty and The Husband can never tell it’s made with whole wheat and oats.

I LOVE the ingredient list and that they use “oat flour” which I use in every pancake I make.

2 cups of mix = 6 flapjacks (1/3 cup of mix each), 2 points+ each ~ DEAL!

The newest mix that I cannot wait to try is the Buttermilk & Honey.

Last week was hopefully the grand finale of my work deadlines that ended up in Vegas where we spent to weekend having fun.  The Husband has a chance to geek out with all his poker chip collecting buddies and we usually try to find new things to do on Annual Las Vegas Trip.  This year we ended up repeating a few of our favorite things to do so I am skipping my daily recaps and sharing all my recaps to date.

    LOVE Kodiak Cakes!! Honestly, I find the taste of the Kodiak cakes so delicious on their own I honestly like a little butter and maple syrup best. Simple and perfect. However, I normally end up using some sort of fruit on top along with a drizzle of almond butter for more protein.

    I just made my 8 month old daughter pancakes for the first time and I used a Kodiak mix. I usually make everything from scratch but we were staying in a beach house so I needed something convenient and the ingredients in Kodiak cakes are great. The baby loves her pancakes (oops, flapjacks!) with just a little bit of butter but I like to top mine with real maple syrup…not creative but I wouldn’t have them any other way!

    I love fruit on my pancakes now…sugar free applesauce, microwaved frozen berries, fresh blueberries…yum. I LOVE Kodiak. How fun to have new flavors.

    (I went back to WW this morning. I’d lost 1.4 lbs…..in 6 months! They were very sweet though. Good to be back.)

    This is going to sound strange but I love lingonberry sauce on my pancakes – you know, the stuff you get from Ikea. It’s not overly sweet, slightly tart, with a hint of fruit. And I smear it on ultra thing.

    We like to make banana pancakes in our house. I throw my over-ripe bananas in the freezer and pull one out when I want to make pancakes. Then I peel it, defrost it a bit in the microwave, and whisk it into the batter. Somehow the combo of bananas and pancake syrup is so delicious!
