Happy Friday Eve all!!! The weekend cannot begin soon enough. I was soooo tired getting up this morning I honestly pondered doing my workout in the evening. I hit snooze and snooze and snooze and then I made my body go through the motions to get dressed and just do it ~ it paid off. By the end of my workout I was pumped for the day ~ really!

I completed my entire workout in a quick 34 minutes versus the estimated 42. I think it was due to working my abs in between my quad exercises. It’s good to know to do that on mornings I am running late. One thing to note was that my workout seemed easy today and I only hit my high point once. I am going switch it up next week and push myself a bit more on the weights.
Meal #1@ 7:25 am was FANTASTIC.
Vegged Out Scramble
1/4 c diced red onion
1/4 c diced bell pepper
1/2 yellow squash, chopped
2 big mushrooms, chopped
8 cherry tomatoes, halved
2 basil leaves, torn
1 egg
1/4 c egg beaters
1 Tbsp ff milk
HOT Sauce
Sea Salt & Freshly Ground Pepper
Non-Stick Spray
Saute your veggies (except tomatoes & basil) in a pan with nonstick spray until softened, about 4-5 minutes. Meanwhile, mix your egg – hot sauce in a bowl. Add your egg mixture and cook until the eggs are done. Remove from heat and add tomatoes and basil.
I had 1 slice of toasted dry Ezekiel bread on the side.
It was an awesome breakfast to start my day and way better than yesterdays oatastrophe!
I ate breakfast while I drove to work – so glad people were not on the road today….I think the fact that there was a grape spill on the freeway before I got on helped though 🙂 People might have been “stuck” in that traffic instead (no pun intended!) 😀
At 10:18 am I was ready for Meal #2. I started off with 1/2 cup of Trader Joe’s 0% Greek Yogurt with a 1 tsp (4 carb) drizzle of Sweet Cactus Organic Agave Nectar.
Then, I added a sprinkle of TJ’s Fiber worms and a baby white nectarine.
My snack did an ok job at holding me over until the aromas started to happen. I swear my sniffer can smell GOOD FOOD anywhere, anytime! 😀 LOL We had a working lunch meeting today and they catered pizza from New York Pizza Kitchen! This isn’t your average pizza place – it is one of the BEST PLACES out here. *sigh*
I stayed strong to my BFL commitment though and I HAD NONE!!! I freakin’ passed up pizza from one of my FAVORITE PLACES and probably drooled all over everyone watching them eat it. One of my co-workers was so sweet – she kept trying to convince me that it was awful and I wouldn’t like it as she downed hers 😀
I ended up having Meal #3 @ 12:45 pm a little early because after THAT my stomach was convinced it was starving. I waited for them to take all the extra pizza and put it AWAY BEFORE I entered the kitchen to make up lunch ~ GO ME!!!
1 small sweet potato, nuked in the microwave for 5 minutes
4 oz leftover taco meat (it’s all gone, I promise!)
2 Tbsp low-fat shredded cheddar cheese
1 Tbsp Trader Joe’s Tomato-less corn salsa
AMAZING ~ I don’t know why I don’t have sweet potatoes like this more often!
I had a side of bell pepper strips and cherry tomatoes.
I LOVE how my Sweet Taco Potato looks like a heart! I don’t eat the skin, I just scooped the insides out to keep my carb/protein balance in check! This was way better than pizza 😉
After feeling super accomplished today with both work and with my eats, I got word from another co-worker that we got some goodies from our last product swap from Artisana! I got to pick one jar to take home. The decision was soooo hard, but, I couldn’t resist the creamy raw cashew buttah – yeah!!!
Nutritionals and I LOVE that it is ONLY made of organic raw cashews!
Thick, creamy and smooth, but, oh so rich. Luckily you can’t eat this off the spoon like almond or peanut butter.
I knew I had to work this into my Meal #4 @ 4:15 pm. This is where I get LAME! I finally whipped up a protein shake with the EAS Vanilla Whey Protein Powder that I LOVE and I forgot to snap the picture – ahhhhh! Ok, so, use your imagination.
1/2 peach
1/2 c frozen raspberries
1 Tbsp creamy organic raw cashew butter
ice & water
In a pretty in pink Magic Bullet Cup! It was delish but I couldn’t taste the peach as much as the raspberry and I am not sure I could taste the cashew butter. That’s ok though because it was so worth being able to lick the spoon 😀
Meal #5 is coming up next as a separate recipe because it was SO GOOD! I got my Pizza fix Body For Life style!
