Weekend Festivities & My Weekly Menu

Happy Sunday all!  Thanks for sharing all your addictions and for the congrats on my loss on Friday’s post.  I actually found myself nodding my head in agreement when you were listing the things you love. 

This weekend was SO FUN ~ awesome weather, delicious food, a bike ride and a BEAR SIGHTING!  I am sad it’s over, but, that all changed when The Husband showed me the Farmer’s Market in our town is back this week!

It’s the little things…..Onto the weekend festivities! 

SATURDAY

While we debated what to do for the weekend, I had TWO of the Healthy Mini Donuts that TJ & I made on Friday (4 points+)

We decided with the awesome spring weather we were having that we couldn’t stay home.  We hopped in the car and decided to drive up to Lake Tahoe.

Road Trip Snacks ~ 30 pistachios for 3 points+

Our first pit stop was Michael’s Deli.  As much as I LOVE their Spicy Thai Chicken Salad, I just wasn’t feeling it.  I decided to venture out and try something new.

Cobb Salad san’s stinky cheese (no gorgonzola).  There was so much flavor with all the salad toppers I actually never used any dressing. (10 points+ calculated by breaking down the ingredients).

After visiting a few antique shops and the Sienna (where I won $30 in two hands of 3-card poker in like 2 minutes!), we headed over to Lake Tahoe.

One of our FAVORITE places to go whenever we head over to South Lake Tahoe is called the Chart House.   I am pretty sure I could come here and eat ONLY their salad bar because it has everything (including PINEAPPLE Open-mouthed smile!)

I ate my salad with the dressing on the side using my fork to dip with each bite. (5 points+)

There bread was just ok this time so I didn’t eat it all, but I LOVED that cracker (4 points+)

This is the ONLY cooked fish that I really LOVE like I LOVE sushi.  I honestly do not know how many points+ it is, but, they do steam the fish before putting the crumb topping on top and broiling it.  I ate about 2/3 of it and estimated it at 10 points+.

After dinner we ventured out for lots of walking and more gambling fun.  Dessert was just a 12 oz nonfat decaf latte (3 points+)

SUNDAY

I actually couldn’t wait for Sunday because we were venturing out into the wilderness ~ My FAVORITE thing to do in Lake Tahoe.  We couldn’t decide between going for a HIKE to Eagle Lake or Biking around Lake Tahoe on the Bike Trails.

We started off with COFFEE, a banana and 1 of my Brown Sugar Banana Nut Muffins (5 points+)

Thanks to everyone who helped us make up our minds when I asked on Facebook & Twitter. 

We ended up renting bikes at Anderson’s (the best place in town!)

You see, you all actually KNEW better than we did, that biking was the way to go.  It’s still a little early in the season so it was only 30 degrees out and not all of the resorts are open.

Do you know what that translates to?? NOBODY being around and ummm…running into a BEAR ON THE TRAIL!

We were just biking on the trail being tourists and snapping pictures……

When The Husband (who was joking before hand about not needing a bike helmet unless we ran into bears) shouts BEAR!

ME: What? I don’t see a B-E-A-R…..ohhhh!

We both stop as the bear turns to see us, stands up and runs up a tree.

I slowly decided to grab my camera when the bear looks back at us and decides to climb back down the tree.

I kinda sorta thought this might not be a good time to snap the picture.

THE HUSBAND: Turn around and pedal like hell!!! Open-mouthed smile

ME: after we were biking safely along the highway ~ um, it’s probably a good thing we didn’t hike because I think I can actually BIKE faster than I can run Winking smile

It was SO COOL seeing a BEAR, but, not so much when you are like 20 feet from the bear.  We actually decided not to venture too much down to do all the touristy things we do each time we take this ride because well, the BEARS WERE COMING OUT OF HYBERNATION.

We were  a little chicken heading back on the trail but after passing a few locals they re-assured us that the beer probably wouldn’t be there on our way back. 

After our 2 hour ride up and down hills and going FAST to keep up with the highway traffic on mountain bikes (lol – not really possible), we were famished.

We headed over to the Yellow Sub (another favorite place!) to get SALAD SANDWICHES.

See what I mean ~ they pack a SALAD in your sandwich.

Turkey Club with AVOCADO & PINEAPPLE! (12 points+)

The Husband actually got The Yellow Sub ~ It’s HUGE and it’s the first sandwich I’ve ever seen him not able to finish.

I drove on the way home and let The Husband have the camera to entertain him on the ride.  Can I just say he took about 124 pictures?! LOL…..

Dinner was Chinese Take IN.

Trader Joe’s Orange Chicken (5 points+)

Vegetable Fried Rice ~ I had half a serving (4 points+)

Green Beans tossed with a little of the orange chicken sauce and sesame seeds.

I didn’t make too many things from last weeks’ menu so they might show up this week along with a recipe or two from my new Weight Watchers Cookbook!

* Shrimp Cobb Salad

* French Dip Sandwiches, 9 points+ & Made with BEER

* Potstickers & Starbuck’s!

* TJ’s Nachos!

Other ideas: Healthified Chicken Fried Steak, Chicken Paella, Turkey, Cheese & Pesto Won Ton Ravioli’s with tomato basil sauce & salad, Clean Eating Collard Greens with Spicy Shrimp and Turkey Sausage

* BREAKFASTS ~ Egg White Sausage & Cheese Wrap, Spicy Scrambled Egg Sandwiches

* LUNCHES ~ Butternut Squash Shells & Cheese!

    OMG what a fantastic week-end you had! Those sandwiches remind me of the salad rolls we have when we go to Australia! LOVE salad on a bun! Gotta have those carbs!

    We’re having your stuffed shells tonight…..made them yesterday and on Cinco De Mayo, I’m making your crock pot tortilla soup! I have some bananas that are blackening on the counter to try your banana muffins!

    Fun weekend! Sandwiches always taste so good in Tahoe! Tahoma Market makes some great ones on homemade bread (West Shore).

    My brother lives there, and a bear once came up to his back door to eat cat food they’d left out for the raccoons. It actually got a little scary after a while thinking that if the bear decided to get a little closer, only a sheet of glass was stopping it. We did take pictures but they stopped feeding the raccoons after that. Too close for comfort.

    SO COOL that you saw a bear!!! Last May we went camping in King’s Canyon and I came face to face with a black bear!!!! She was 4 feet from me. I FREAKED OUT. lol. But everyone kept saying that she didn’t want to hurt me. SO SCARY. And this bear wouldn’t leave the campsite. Apparently the bears were coming out of hibernation late and were hungry… and its def easier to steal campers food and not find their own. Every evening when all the campers were cooking she’d come strolling through camp and you’d hear people banging pots and pans as she strolled through, so you could always infer where she was. NOT COOL. haha I like bears, but not up in my grill.

    SO jealous that you can just head over to Lake Tahoe for the day! I’ve only been there once (this past Dec) and it was a blast. Would love to go back when it’s warmer and bring our bikes and also take some hikes. What a great weekend you had!!! 😀

    Your menu looks great… can I come over for dinner 😉 …still not really cookin bc of the injury & everything you are planning to make sounds so. good.

    What an awesome weekend and that Cobb salad looks delicious. Definitely one of my favorite types of salads. One thing on my menu this week is chicken tortilla soup. I feel like I need to put to use all the chicken and tortilla chips I have in the house right now.

    Sounds like a great weekend! We’re going to Tahoe this weekend for our anniversary and now I’m freaked out about bears! 🙂 I’ve found crackers that look just like the one in the pic above at Trader Joe’s, they taste like an everything bagel in cracker form, love them.

    Those mini donuts are so cute and look delish!
    I can’t believe you guys saw a bear! We’ve been nervous about that every time we hike in “bear country”. Glad it turned out ok for you!
    Those subs are huge! I love all the toppings!

    Sounds like a great weekend! I can’t imagine seeing a bear! I was hoping for a picture, but it sounds like you were wise to pedal instead.
