Weekend Recap, Giveaway & Weekly Menu

Hi everyone! How was your weekend? I had such a great weekend, I’m not even sure where to start. Before I dive into my Recap, let me start by saying this is my post where I’m giving away 4 Free Blue Apron Boxes. Just leave a comment below for your chance to win one.

Saturday started off with a 1 lb weight loss at my Weight Watchers meeting. We headed over to breakfast at Huckleberry’s before stocking up at the Farmers Market.

My usual – 2 eggs over medium, 2 pieces bacon, 1 slice sourdough toast dry (9 sp).

My only Starbucks this weekend – sad but true lol. Grande iced Nonfat Latte with caramel on top. (3 sp).

Lunch was so simple yet so good. Sourdough baguette topped with balsamic, 3 slices ham, 1 oz real deal pepper jack cheese (7 sp).

Dinner was the last of our Blue Apron meals for this week and the one fish I was the most excited about.

Shrimp with Fresh Gnocchi, Corn, Tomatoes & Basil. Here is the recipe.

You start out blistering the whole tomatoes in a little olive oil for 3-4 minutes. Sprinkle with salt & pepper then set aside.

In the same pan, add the corn and green onion cooking 1-2 minutes.

Then add garlic (I doubled it), shrimp, crushed red pepper flakes, salt & pepper. Saute until the shrimp is cooked through about 4-5 minutes.

After boiling the gnocchi for 3 minutes (you know they are done when the float to the top), add them to the pan with a 1/3 cup pasta water little butter, basil and the tomatoes. Season to taste with salt & pepper.

I served mine up with a little freshly shaved parmesan on top. The verdict I loved the pasta but think I’d cook the shrimp differently next time so they get more flavor. (9 sp for 1/4 of the dish).

This morning, I was up early to tackle my day. I whipped up this 4 point Chili Relleno Egg Casserole ( recipe coming up later this week).

I also made a batch of fresh tomato salsa and this Southwest Chicken Soup for lunches this week.

My exercise today was 3 hours cleaning our house. I don’t really like cleaning but I love the feeling after when everything is sparkly.

Lunch was a repeat of yesterday plus chips & watermelon. (12 sp)

We went to see some friends in the afternoon and stopped at Target on our way back. The Husband really wanted jalapeno poppers which they did not have so he ended up with these TGI Fridays Loaded Potato Skins.

I really wanted one and so I went with it – 7 Smartpoints each but dam good lol.

Our dinner was surrounded around these sauces that my co-worker gave me last week.

We used the Kalbi marinade on this steak. Grilled and served up with 1/2 cup Trader Joe’s Organic Brown Rice and green beans. That sauce is tasty – sweet, salty, garlicky with hints of ginger. I still do not love beef (I had 2 oz) but that sauce makes it better! (5 sp)

One of my other weekend projects was  creating a healthy ice cream recipe. After dinner, I froze attempt #2 of my Healthy S’mores Ice Cream which was a complete success. My last 2 points of the day were spent tasting it.

I’ve been wanting to venture out to get an air fryer for quite some time. I’ve resisted and resisted even after a few of you raved how much you love yours.

Today though, I gave in. I hit a great sale plus had a 20% off coupon and 2 gift cards to use so how could I resist?!

Now, what do I make first???

  • Slow Cooker Pepperoni Pork Tacos then Nachos the next day

  • Grilled Pork Ribs with corn & parmesan zucchini

    I’ve never heard of an air fryer….. Looking forward to seeing what you do with it. Where did you get yours? I have yet to try a meal service. It would be great to win your Blue Apron giveaway. Thank you for all your inspirations!

      Hi Susan,

      I bought mine at Kohl’s of all places. The 6 Q Nuwave Brio just came out in April and goes for $149. They had it on sale for $119 plus I used a 20% off coupon making it $95. I then had giftcards so my out the door cost was $41 🙂 They still have the sale going on this week. I debated the 3.4 quart and the 6 quart but they were both the same price and I liked the idea of the divider in the larger one as well as being able to cook an entire chicken.

        Wow! Thank you! I suspected you might have gotten it at Kohl’s. They are one of the few places that take additional off sale pricing. At the same price I’d go with the larger also! Plus cook a whole chicken in it? Ok! Have a Greta week! : )

    I have been wanting to get an air fryer ever since my brother got one last Christmas….since joining WW- every body raves about it! Also, I would love to try Blue Apron, trying new recipes are,always a favorite pastime. I will be watching close to see what you do with your new toy….air fryer that is! ?

    I love your emails but wish that I didn’t have to wait for recipes for some of the great ideas that you come up with. I’m afraid I’ll miss one ?. You’ve envigorated my meals & for that alone I thank you. Blue Apron sounds interesting but I’ve always been afraid to try it. Maybe I’ll get my chance.
