Happy Hump Day all! I LOVE that the week is already HALF over I woke up this morning to the delicious smell of the Crockpot Split Pea Soup bubbling away. It’s probably the first time I’ve ever in my life pondered having split pea soup for breakfast ~ what can I say, I am a savory, not sweet, person in the morning LOL.
Don’t worry, I refrained ~ you are not going to see a BIG BOW of green for breakfast. I took the leftover Jennie-O Smoked Turkey Sausage and fried it up for breakfast.
2 ounces = 2 points+ Deal! plus a 1/4 cup eggbeaters with hot sauce (1 points+)
Plus a delicious Double Fiber Oro-Wheat English Muffin sprayed with ICBINB Spray ~ I LOVE that they only went up by 1 pp (3 points+)

I almost skipped my mid morning snack, but, when I realized I wouldn’t get lunch until 130, I knew I had to have something. I grabbed a big bag of veggies with 2 Tbsp of Ranch to snack on as I drove (4 points+)…..don’t you all wish you were on the road with me then?! LOL I got some funny looks…
I pretty much inhaled lunch part 1 ~ Crunchy Broccoli Slaw ~ Trader Joe’s Organic Broccoli Slaw topped with 1 Tbsp Trader Joe’s Spicy LF Peanut Dressing (1 point+)
Then, FINALLY, that split pea soup I’ve been craving ever since the last time I made it. It totally hit the spot! I am not sure I’ve ever been more in love with a GREEN soup….Thank you VickY for creating and sharing this recipe! (7 points+)
I am pretty sure that TODAY my body thinks it is stocking up to hibernate for the winter because I have been hungry every couple of hours. I HATE days like that, but, I don’t feel guilty when it justifies a snack.

I LOVE CALIFORNIA because you can BBQ in the middle of winter! I totally turned on my grill outside to whip up some delicious Gayle’s Sweet & Sassy Apple Cider BBQ Chicken.
Is it weird that when I BBQ, I CRAVE KALE CHIPS?! I LOVE these 0-2 points+ Chips because they crunch and tastes like salty chips.
They are so easy to make.
1. Preheat your oven to 425 degrees – you want a HIGH temperature.
2. Tear your kale into “pieces” away from the stem, rinse, spin in your salad spinner and towel dry. It’s really important to get the moisture off of them so they get crunchy versus steam.
3. Place your chips on a cookie sheet. Use nonstick spray with sea salt and black pepper for 0 points+ OR drizzle with 2 tsp Olive Oil and 2 tsp Parmesan Cheese with sea salt & black pepper for 2 points+ for the ENTIRE PAN.
Bake for 7 minutes, until crispy, but, not burned.
Pile them on your plate and eat them straight up or dip in ketchup.

If I had to pick, I’d say corn LOL, but, I know that is not “technically” a vegetable. 2nd choice is sugar snap peas, swiss chard and kale….Ya, I pretty much can never pick just one thing ~ notice that?!

You’re convincing me to try kale chips again! I made them once and did not love. I couldn’t get the thought of raking fall leaves out of my head! LOL! Oddly, THE HUSBAND (hater of all things healthy) LOVED them! Go figure…

hmm…I like a lot of vegetables…but def like some better than others. Not a huge fan of raw carrots…but I like them cooked just fine. I guess asparagus and spaghetti squash would be my top two!
i think i need to make myself some kale chips..they look so yummy!!

Here is the recipe I used for the crockpot soup. My only changes were to use smoked turkey sausage instead of ham then I added a little hot sauce and fresh thyme (because I had it on hand).

i have eaten like 12 cuties in the past two days. they are addicting!
we made kale chips all summer with the kale from our CSA. i guess i could tolerate them again in another, oh, 5 months. ;p

I am having the hardest time getitng the most out of my points. I am starving most of the day, things I pick to eat are high in points, small to eat…ARGH! Keep up your great work 🙂

I really, really like broccoli. I like it in pasta, rice, stir-fry, steamed and roasted!
I really like green beans! I know it is kind of simple but I can make them a bunch of different ways and I could eat fresh green beans every day and not get sick of them. Next in line would have to be asparagus.
