Hi all! How was your Monday? My day was super busy, productive and filled with delicious eats. I feel very good about my day and that led to a few successes along the way.
Breakfast repeats – I woke up craving this sausage eggwich and could not wait to eat it again (4 sp).I grabbed a tall nonfat cappuccino with caramel on top on my drive in (2 SP).
We had a New Year, New Leader staff Welcome Party with Rosca de Reyes (3 King Cake). While I was intrigued by the cake, I had none – success!
For lunch, I had two cups of the Spring Chicken Orzo soup (3 sp).Dessert – banana + Dove Dark Chocolate (2 sp)I pondered an afternoon snack especially when I was telling my coworker about how easy Instant Pot Eggs are to peel….but I just wasn’t hungry.
That being said, by the time I walked in the door (6 hours after lunch) I was starving.
I thought about tearing into the sourdough bread The Husband bought but I didn’t. Success!
I steamed these zero point peas instead!
Pea haters don’t, you can do this with corn 😀I devoured my peas while prepping dinner.
I whipped up a quick salad while the Tortellini Pizza Casserole baked.I love the crispy turkey pepperoni on top (the best part of pizza aside from the crust) and the cheesy tortellini on the bottom.1/8th of the casserole for 8 WWFreestyle Smartpoints with 2 points for my salad that has pistachios with olive oil & balsamic.21 Daily WWFreestyle Smartpoints, 5K steps
What was one success you had today?
Night all!

This casserole looks amazing. What sauce do you use?
My success was getting my son out and walking. He needs to lose some weight and I am trying to give him the message without hurting his feelings. We all could eat better and exercise more. I am the momma and I have to be the one to GET OFF THE COUCH. I am the role model. That sure is a lot of pressure but I know that I have to do it for him.
Thank you for your wonderful recipes. I love your blog.

Hi Tracy,
I love Trader Joe’s Arrabiatta sauce but also like Classico Tomaro Basil.
Great job getting off the couch and walking. It’s great to lead by example but even better that it’s a win win for you both.

Good for you momma. I need to get off the couch myself and get to walking. Make those habits and enjoy your time together.

Thanks to you I’ve tracked my food every day since the new year. It DOES make a difference.

That’s awesome – I have too! It really does make me think, do I want to spend my points on that and I am definitely skipping the small tastes/bites.
Keep up the great work!
