Hi Everyone! How are you all doing? I am pretty excited about this week’s menu as I am bringing back a few favorites that we love and trying a new recipe. I am still pondering my Super Bowl Recipes to see what I want to make, but, have a feeling that a few on this list might just show up too. I am getting ahead of myself though…here is what is on this week’s menu.
BREAKFASTS:
I’ve been missing my Protein Pancake so this definitely made the menu today. I love the fact that it went down on points on Smart points – The entire pancake is only 5 points, leaving plenty of room for toppers!
Topped with 1/2 a banana, 1 tsp of Whipped Butter, 1/2 Tbsp Pure Maple Syrup (heated) and a sprinkle of Organic Unsweetened Coconut Flakes. 8 smartpoints Click HERE for the Recipe.
I will make a few of the usual Healthy Eggrolls, scrambles and breakfast burritos. Although I’ve been eyeing this Ellie Krieger Herbed Ham and Cheese Bread Pudding ever since I picked up her new book.
LUNCHES:
I made up a big batch of Mini Chicken Cilantro Won Ton Soup today. I mix up how I make it with whatever veggies I have on hand or like this week, I buy a precut stir fry mix to keep it simple. I love that you get 4 mini wontons for only 1 smartpoint! 2 cups of this soup with 9 wontons is 4 smart points.
DINNERS:
This is really what my weekly menu is all about! Each week I plan out 5 meals that I want to make, sometimes more if I cannot decide. My goal is to have a couple of quick gotos that either The Husband or I can cook as well as to try bring in a few recipes we love with one new recipe to try. I think this week I managed to do all of that ~ that’s what happens when I make our menu up when I am hungry! 😀 The updated smartspoints values for these recipes are listed in this post to save you a little on converting.
Tonight we are making these 9 smartpoint Weight Watchers Best Ever Steak Sandwiches.
They really are amazing, easy to make and show up frequently on are menu.
Simply Filling Baked Turkey Ziti (or Penne or Rotini – really use whatever noodle you have on hand).
It is so easy to make ~ whip up a chunky turkey & veggie packed spaghetti sauce, add pasta, top with cheese and bake for about 15-20 minutes until the cheese is melted and all bubbly.
8 servings for 8 smartpoints each.
One of my all time favorites – Sweet Potato BLTA Nachos! I sometimes make these using butternut squash and I use Yukon Potatoes for The Husband as he doesn’t touch sweet potatoes or squash. You could lighten this up to be less by reducing the toppers but if you want the entire plate with all the fixin’s including 4 pieces of bacon, it’s 12 smartpoints.
I love burgers ~ turkey burgers, chicken burgers and these Better Than a Big Mac Burgers! You can save on points by wrapping these up in lettuce or you can go for it with these thin buns for 10 smartpoints. Serve up with a simple side salad, Kale Chips or butternut squash fries for one amazing meal!
The Husband will also be grilling up some delicious pork chops for us. I love that you get 4 oz for 3 smart points. It definitely leaves you room for these Weight Watchers Smashed Potatoes (which I LOVE!) and a veggie or two.
I have an idea for making Chicken Marsala Brown Rice Bowls (which is my new to make recipe) so if I have time, I’ll be making and posting that. Sorry, no pictures yet other than this cremini mushroom chicken that I’ve made before.
We will finish the week out with Shrimp Scampi! This is honestly one of my favorite recipes to make because it’s so easy and you get a lot of shrimp. It’s delicious over rice, pasta or by itself. I may get brave and bust out my spiralizer to make zucchini noodles (just don’t tell The Husband). 6 smart points when served over 1/2 cup brown rice.
That’s pretty much what is on our menu this week and I cannot wait to dive in!

I love your protein pancake batter, but I changed the Agave syrup to sugar free maple- now only 4 smart points And I make the batter into 2 waffles. Now you can eat the waffles with toppings or break it into pieces to use as the “bread” in a breakfast sandwich. Yum!

I recalculated the stats on your Beef Cheesesteak recipe and it actually comes out as 9 smart points not the 8 that you stated. Did you recalculate all of the receipes?
