Happy Friday all! Can I just say I really missed you all?? I honestly LOVED reading all your comments on my last post and hearing about your goals. I think putting them in writing and telling others make you more likely to achieve them. I know we are all going to kick some bootie this fall and be raving to each other about reaching our goals ~ I can’t wait to hear about your successes too!
I had a little bit more time this morning (since I didn’t hit snooze 3 x’s) so I whipped up another “Eggsellant” Breakfast 😀
1 Zucchini
1/2 cup sliced mushrooms
1/4 cup diced red onion
3 mini sweet peppers
Nonstick cooking spray
Then, I thought a little Morning Star Veggie Sausage sounded really good too.
Remove sausage & add 1/2 cup of Egg Beaters spiced up with Tapatio Hot Sauce, sea salt & black pepper.
I LOVE these little sausage patties ~ they taste like the real deal and I NEVER tell The Husband it’s a veggie patty 😉 He doesn’t ask and well, it’s good for him….shhhh!
I LOVED how adding a ton of veggies gives you a plateful of scrambled eggs.
You know I dumped more hot sauce all over this. Not a bad breakfast for 3 points.
My mid-morning snack sounded really good in my head, but, it didn’t quite pan out on the plate. I thought I’d make little cucumber sandwiches using cucumber spears, Low-Fat Swiss and Smoked Turkey. Instead, it turned into a sandwich stacker. (2 pts)
You all would be SO PROUD of me at LUNCH ~ ok, well, I am proud of me 😀 LOL. The Husband had today off and he drove out to meet me for lunch. We went to ROUND TABLE PIZZA.
I asked myself ~ do I want to have a mediocre salad and like 1 or 2 slices of pizza OR do I want to make a GIGANTIC salad with everything I want on it?
—–>Remembering my “HARD CORE” GOALS, I picked the salad and LOADED it up!
Can I just say this was like the BEST salad I’ve ever had?! Or at least I was telling myself that as The Husband chowed down on pizza and garlic parmesan twists.
Believe it or not, there is romaine on the bottom
Broccoli
Cherry Tomatoes
3 Pepperoncini’s (does your mouth water when you type or read that? Mine ALWAYS does!)
Cucumber slices
1 Tbsp Kidney Beans & Garbanzo Beans
1 Tbsp Cheese (because I LOVE it)
1 Tbsp Olives (healthy fat)
1 Tbsp Sunflower Seeds (healthy fat)
2 eggs (for protein)
2 scoops of low-fat cottage cheese (more protein)
2 Tbsp Ranch dressing in a container on the side using my fork to dip
11-12 point estimate since the ranch is 4 points by itself.
I wanted something spicy and crunch for my mid-afternoon snack and honestly I couldn’t eat ANOTHER vegetable at the moment. I opted for 20 H-O-T peanuts (2 pts)
Dinner was super EASY since I made my lunch up to take today. It was the same salad at yesterday with guacamole plus swiss cheese & topped with Newman’s Lite Lime Vinaigrette.
I dunno….maybe because I am crazy and have wanted to make this soup FOREVER, I decided to cook anyway LOL. It’s better than I thought it would be.

I am off to convince The Husband that there are other things on TV besides football. I wonder if I’ll win 😉

That salad looks so GOOD! And while pizza sounds good, I bet your salad left you feeling better and more satisfied than pizza would have.

Loaded Salads are the BEST! You can fit SO MUCH MORE into a BOWL than on top of a pizza or in sandwich bread! Ye Ye! Next time try some artichoke hearts, green beans & sun dried tomatoes!! So Good!
