Hi all! How was your weekend? I have to say we had a pretty fantastic weekend. I kicked off the weekend with another 1.6 lb weight loss! We road tripped yesterday and relaxed today. Today was a seriously delicious, healthy and totally on program food day.
It started with these homemade cinnamon rolls I whipped up this morning. Each one is 6 Smartpoints and I had mine with a banana for a little staying power. I’ll be posting the recipe this week.We had lunch at Jersey Mike’s after running a few errands this morning.
I had a mini #7 Turkey & Cheese Mike’s Way (lettuce, tomato, onion, oregano, red wine vinegar & evoo) plus pepperoncinis & jalapenos for 8 Smartpoints. Dinner tonight was our last Hello Fresh recipe for Pork Carnita Tacos. I loved these tacos. Not only did I learn a few new tricks, I have a recipe that I am keeping to make again.
Once you prep the veggies, this recipe goes together quickly.Brown the pork over medium-high heat in nonstick spray.While the pork cooks, pickle the sliced red onions in a little white wine vinegar, sugar, salt & water.Whisk together the sour cream with lime juice, chipotle powder, salt & pepper.Remove tgt pork from the pan and add the onion and poblano pepper. Cook until softened, about 3-4 minutes.Add the pork, chicken concentrate, tomato paste, fajita seasoning and water to the pan. Stir to combine, about 1-2 minutes.Tadah! I could eat this smoky pork Carnita mix straight from the pan.Build your tacos – pork carnitas, a little cheese, sour cream drizzle, tomato, pickled red onion and cilantro. The lime gets squeezed on right before you dive in.
I love the creamy, smokiness of the sour cream that melts into the spicy pork. You get a sweet, crunchy bite from the pickled red onions, lime and cilantro.
