Happy Monday all! I honestly couldn’t wait to get through my morning routine just so I could dive into this pesto infused Sweet Pepper, Tortilla & Egg casserole. It was so hard to resist having it last night as it smelled so good cooking. I actually offered it up for dinner but The Husband wasn’t interested lol.
1/6th of the casserole is 5 WWFreestyle Smartpoints. Served up with berries.I knew I’d be starving by the time I returned from my walk so I snacked on a banana and Jarlsberg Mini Swiss cheese before heading out (2 sp).We discovered a new trail walking today that lead to this park. It was a beautiful and partially shady walk which helped with the heat. I love all the walking trails by our office.I made Pinwheels for lunch that were centered around using this Trader Joe’s Olive Tapenade. I think this would be delicious tossed with pasta or on pizza too.La Tortilla Light Flour Tortilla topped with 1 Laughing Cow Spicy Pepper jack wedge, 1 Tbsp Olive Tapenade and 2 oz honey ham (5 sp).
Sliced into pinwheels and served with cucumber chips.With watermelon for dessert.Late afternoon I snacked on these (4 sp) and 2 Tbsp pistachios (2 sp). I probably should’ve eaten my fruit and nuts but I really wanted these too.The Husband actually picked this Vegan Weight Watchers Chopped Salad out of my WW Favorites cookbook this weekend. I have to admit I initially was skeptical about raw zucchini but it’s actually really tasty.This salad comes together in minutes and gets tastier the longer it marinates. To the mix I added fresh parsley and a dash of honey.You get a big 1 cup serving for 1 Smartpoint. This salad is so fresh and satisfying – tangy, crunchy and sweet with hints of garlic.
Served up with one BBQ pork ribs (4 sp).I had one of my Cinnamon Banana Muffins for dessert (2 sp). 25 Daily WWFreestyle Smartpoints, 12K steps
