WW Pasta Primavera

Happy Wednesday all! Thank you all for sharing the weirdest salads you ever ate – it was fun to hear them all. This morning, I was up and out the door by 5:45 am to head to my dentist appointment. Those two little words, No Cavities always make my day!

Breakfast was one of these Sandwich Bros Sausage Egg White Flat Breads (4 sp) with done blueberries.My post dentist reward – a tall nonfat cappuccino with caramel on top (2 sp).I was starving at 10:30 so I snacked on a banana and Jarlsberg Mini Swiss cheese (2 sp).

I am super proud that I stayed the course of my planned lunch and skipped the Squeeze Inn Food Truck that parked in front of our building today…..oh the smell of fries and cheesy skirts filled the office.

I guess I was too busy thinking that as I forgot to take a picture of my lunch. I had 1 serving Taylor Farms Chopped Garden Vegetable Salad topped with 3 oz buffalo chicken. (5 sp) plus 2 cuties.Mid afternoon snack was 2 tablespoons pistachios. (2 sp).Dinner tonight was the WW Pasta Primavera from my 15 Minute Meals cookbook.

I pretty much followed the recipe subbing fat free ricotta and using Trader Joe’s Lite Mozzarella shreds. I also added a sprinkle of Italian seasoning and parmesan.It all goes together and is ready in about 30 minutes.The verdict…it wasn’t bad but I feel like it could’ve used more flavor and more cheese. I did get a good laugh at The Husband literally trying to pick out all the peas.
