1 Amazing Recipe, 1 Eh recipe & My Weekly Menu

Happy Scandalous Bachelor day everyone!!  I debated all morning if I really wanted to watch this year’s Bachelor because I didn’t really LOVE Brad the first go round.  But, after all the fun conversations on Twitter and Facebook with you all, I just had to watch just the “first” show…you know, to see the “characters” involved Open-mouthed smile

Still watching now, but, I have to say so far I LOVE the Southern Girl….OMG, her LOVE story made me get all misty…..Brad, ya, not so impressed with and fang girl…really, seriously?!  Ok….all done, for now Winking smile LOL.  Gahhhh, they just reeled me in hook, line and sinker because they film the finale in ANGUILLA!!! That is the island we got married on!

For those who watch, do you all have a favorite yet?

This morning I decided it was time to whip up the cheesy, bacon, egg cheese burrito that Geri of My Heart Art offered up for the Featured Recipe of the Week on Friends for Weight Loss this week.

My favorite “regular” tortillas are these Organic Flour Tortillas from Trader Joe’s.

I LOVE them because they are a combo of both flour & corn tortillas.  They are 4 points+ each and that is exactly that same calc at the Whole Wheat version.

Her recipe is so simple.  I used 2 slices of Trader Joe’s Turkey Bacon with 1/3 cup Egg Beaters and 1/3 Ore Idea Potatoes O’Brien browned in nonstick spray.

Then, added 3 Tbsp Weight Watchers Mexican Cheese, green onions and Tapatio Hot Sauce.

8 points+ and completely AMAZING!!!  This burrito kept me full for 6 hours ~ Protein Power!  Thanks Geri for sharing….I will definitely make this again. The Husband LOVED his 2 burritos too but told me he didn’t like them if they were healthy for him LOL Open-mouthed smile

Since we both received Starbuck’s Gift Cards for Christmas, we decided the last day of vacation = a Starbuck’s day Winking smile  My usual Dirty Latte (Iced, ff, decaf latte with 1 pump mocha) (4 points+)

We shopped ALL afternoon long looking for a new dining room table and at living room sets.  The Husband’s winter project is to remodel our living room, the last room in our house.  Car snacks shared with The Husband.

We want a High Top, Pub Table in a dark, rustic color.  I snapped pictures of all of them so we could debate over them, then, I figured, why not share in our shopping fun.

This was my favorite one….I really like the styles of the chairs and you can make it smaller.

We finally decided to stop for a lunch break at 3 pm at Mary’s Pizza Shack.  Normally I can pass on the bread, but, I was starving (2 points+ with 1 tsp butter)

I got the Pronto Lunch Special ~ salad & pizza for $6.  I had my dressing on the side and dipped my fork in it with each bite.  This let’s you use only like 1 Tbsp (3 points+)

Quite possibly the BEST thin crush Mushroom pizza I’ve ever had (It might’ve been that I was starving, but, really maybe it’s been too long since I’ve had pizza in my life) (5 points+)

After lunch, we figured since we couldn’t decide on a dining room table to buy an Entertainment Center, coffee table and end table.  I LOVE it!

We celebrated at Cultive Frozen Yogurt after since we had a Groupon for FREE froyo!  I had half vanilla and half chocolate with sprinkles, a little Heath Bar and Strawberry Crunch (7 points+)  Totally worth indulging for our last day of vacation….Love my WPA!

Dinner tonight was not as good.  I had such high hopes for THIS RECIPE I saved from my January 2010 Fitness Magazine.  It also gave me a reason to use the light coconut milk I bought at Trader Joe’s.

I think it’s lighter because they water it down.

Pulse to chop your cashews….check!

Cuisinart 11 cup Food Processor

Add shredded coconut….

Then, corn flakes!  This is the part that had me sold on the recipe…doesn’t it sound good already?

I set up my chicken tender dunking station.  The bowl on the left is red curry paste, coconut milk and regular milk.  On the right, the delicious crust we made above.

Dunk in the curried milk, let drain, coat with crumbs and place on a prepared baking sheet.

Bake at 400 for about 15 minutes, flipping half way through.  The chicken itself is tasty, but, I think the crumb mix needs more to it…salt, pepper, spice?

I put my chicken on a bed of organic mixed greens with dried cranberries and a few extra cashews.

Salad #1 included their dressing…..Curry paste and coconut milk.  OMG, it was SO AWFUL, I had to toss it and start all over again. (9 points+ for 1/6th of the recipe with dressing)

I busted out my absolute FAVORITE Trader Joe’s dressing of all time instead ~ Spicy Peanut Vinaigrette.

It’s sweet, slightly spicy, definitely peanutty and just plain good~  Try it, you’ll like it!

HERE IS WHAT IS ON THE MENU THIS WEEK:

* Bacon Cheddar Stuffed Burgers with Kale Chips and maybe corn on the cobb

* Vegetarian Fiesta Enchilada Skillet (I am making it this week for sure!)

* Tortellini with this leftover AMAZING Turkey Cabernet Pasta Sauce

* Clean Eating Szechuan Shrimp with broccoli, peppers & mushrooms

* Flat Out Amazing Pizza

That’s the plan and as usual, no guarantees….I am easily influenced by all the delicious recipes that show up in my inbox each day and online Open-mouthed smile.  I am really wanting to try another crockpot recipe, a soup recipe and my new Weight Watcher’s Points+ Cookbook so I may pick something from there too.

1.  What is one show you NEVER miss?

For me, it’s by far, The BIGGEST LOSER and it starts up again tomorrow ~ I cannot wait.  I have a feeling though, I might be “reeled” into the Bachelor now Winking smile

    I’ve had a lot of “eh” recipes lately. I don’t know what’s happened to me. It’s disappointing to have high hopes for a recipe and then have it fall flat.

    Oh and I was supposed to go to Anguilla (Cap Juluca) for my honeymoon (15 years ago)! I was so excited, but a week before my wedding they had a hurricane and the whole resort was wiped out! Boo! We ended up in Barbados instead. I have dreams of getting back there one day!

    Hi Danielle,

    You know, it’s funny! His BFF loves them and will devour the entire pan I make when he is over, however, The Husband, will not touch them at all. I have no problem with that at all because I could honestly eat the entire pan myself 🙂

    I have watched every season of the bachelor and bachelorette (although I may miss a few episodes here and there). But I just cannot get myself to watch this season. I’m not gonna do it! I’m NOT!! lol

    i’m a biggest loser fan too! 🙂 i don’t have tv so i go to my gym to watch on their cardio machines. it’s my strongest motivation to get to the gym!

    That is a good dressing! There are a lot of other tortillas out there that are better for you. Those only have 1 gram a fiber and I notice they don’t have “whole wheat flour” in them.

    I tried this 35 calories/cup almond milk with a half banana, few drops of vanilla, some splenda, an ice cube in a small blender cup.
    Deee …llllllicious creamy tasting banana shake, actually 2 glasses all for 1 point!
    YES, only 1 small point but tasting so good!
    Tried with frozen rasberry a few days, not a winner.
    I<ll see about frozen blueberries.

    But it seems this 0 point banana is a winner.
    I think I've been missing my banana all these years!
