Happy Monday all!  As promised yesterday, I am back with one Eggsellant Eggland’s Best Brunch Giveaway for you all.  I will start posting all those delicious Brunch Recipes starting tomorrow, but, I couldn’t wait to share this giveaway with you all.  It is so FUN and I can’t wait to find out what you all would make in your EB Mine Brunch!

Eggs are probably on my Top 10 List of quick 2 points+ breakfasts and Simply Filling Snacks.

    I like to stir an egg into my oatmeal while it’s cooking, it makes them creamy and you get a filling protein and healthy fat boost! I also love a good veggie and cheese omelet

    I love making fritattas with Eggland’s Best egg whites, and adding eggs to breakfast wraps, salads, and stir-fry dishes. I usually keep a bowl of hard-boiled eggs in my fridge for a quick snack.

    I’d say either hard-boiled, or in breakfast burritos, scrambled! I’ve started making a huge batch of breakfast burrito filling on the weekends, then the 3 of us eat it all week. It’s a great time-saver!

    I like them hard boiled, “fried” in 1 TBSP of olive oil with a runny yolk, or with the yolk busted the way you put them on your eggwiches. 🙂

    How *won’t* I cook those eggs, is a better question! I’ll likely have them hard boiled, either plain or in a salad; fried, either with toast or on a sandwich; scrambled, either on their own or wrapped in a tortilla; cooked into oats; folded into baked oatmeal; mixed into cookies; and poached with ramen noodles!

    I told my husband because he loves eggs too! I will try to recreate a breakfast pizza I saw this weekend in SF that had canadian bacon and a poached egg. Everyone was eating this delicious looking breakfast at this eatery.

    I LOVE eggs! I eat them every single day. If I do not have them for breakfast, I have them as a post-workout snack. I love hard-boiled egg whites, poached eggs, “fried” eggs with Pam cooking spray, scrambled eggs and or egg whites, and scrambled with other items such as grilled onions, mushrooms, spinach, ham, and of course CHEESE…sometimes 2pp worth…sometimes 3pp!!!

    I “toast” a piece of bread in a muffin tin while I’m scrambling an egg on the stove top. When the eggs are done I put them in the toasted bread cup, top with shredded cheese & pop it back in the oven to melt the cheese.

    I would hard-boil about half the carton to have them on hand as my afternoon “lift-me-up” snack throughout the week and then, in the mornings, I would use them to make my FAVORITE ommelette with: FF shredded cheese, sliced mushrooms, and FF refried beans, with a dab of salsa and ff sour cream on top—yuuuuuuummmmm!

    I would make a quick plate of Chilequilles!!!
    Heat 1 tsp olive oil or canola oil in a pan
    put 1-2 cut up corn tortillas in pan and cook almost crispy
    add 1 delicious and nutricious EB egg
    3 tbsp tomato sauce
    a few sprigs of cilantro
    salt & pepper to taste and scramble up til EB egg is cooked
    add 1 tbsp WW shredded cheese on top to melt
    YUMMY!!!!!

    Oh so many ways I’d use them! I’d make poached eggs for dinner salads, cooked eggs on pizza (yes, it’s good), scramble them with tons of black pepper, bake with with spinach, tomato, and parmesan, and use them to bake cookies and banana bread 🙂

    I always buy Eggland’s Best – they are worth a little more money! I always keep some boiled and ready for a quick breakfast or snack, I love them fried with turkey bacon in a toasted Fold-It, and lately I have been loving them in fritatta – especially the one I made this weekend with Swiss Chard!

    I love Egglands Best! I think you can actually taste the difference between EB & other eggs and EB are so much better!
    I have one almost every morning. Usually “scrambled” in the microwave with turkey or veggie sausage and a tiny bit of low fat cheese and served on a 100 cal english muffin.
    Although really, anyway I cook my EB is my favorite 🙂
