Happy Thursday all ~ I am SO READY for the LONG MY BIRTHDAY WEEKEND to start. I think it’s SO COOL that they put a holiday on my ACTUAL birthday :D I am getting out of work early tomorrow too ~ woohoo!
I am super tired today due to my lack of sleep yesterday so today’s post is going to be super fast. or well, as fast as I can be since I ramble on forever each day 🙂
Breakfast was quick and all I could think of since I was half asleep still.
Pear Oats ~ 1/3 c Old Fashion Oats, 2/3 c water, cinnamon, pear ~ microwaved for 2 minutes (2 pts)
Plus a Flat 1 point Spicy Egg White Fluffy since my bowl was MIA.
My mid morning snack was 3 points of deliciousness ~ two banana “sandwiches” (1 banana plus 1 Tbsp almond butter)
I continued my trend of getting pampered before my Birthday on Monday 😀 (I have to look BETTER if I am turning another year older) and got my eyebrows waxed at lunch. The spa I go to is right next to Panda Express and I couldn’t resist….I was craving vegetables!
Mixed Veggies ~ 1 pt
Mushroom Chicken ~ 3 pts
String Bean Chicken ~ 3 pts
All together this was a whole lotta fiber :D My stomach was totally growling all afternoon but it was worth every crunchy bite!
I finished off the last of my Dark Chocolate Blueberry Bar (2 pts) for my afternoon snack. I LOVED this chocolate, but, they need to put more blueberries in there so you can taste them.
When I got home, before I could even think about how tired I was, I hopped on the treadmill. Just as I was really getting into my music and run, my inner thigh muscle started hurting. I stopped and walked a bit, but, decided it was better to not push it. I had to settle for 2 miles today as much as I wanted to do more.
I sipped on some Sobe Life Water while I cooked dinner. I LOVED this Blackberry Flavor ~ it’s 2 pts for the entire bottle, I had half…..I felt totally “enlightened’ drinking it :D I may or may not have had a few of The Husband’s BBQ PopChips too.
Dinner was simple, healthy and fast. I topped chicken breast with some of the BBQ Seasoning we got in the Caribbean then cooked it in our electric skillet. This is the first time I’ve ever used an electric skillet and I LOVED it. I can definitely see it making an appearance again.
I bought thins Lundberg Cheddar Broccoli Risotto awhile back to try.
Risotto is often intimidating to me because you have to cook it just right or the rice gets super gummy or not cooked all the way. I LOVED the stats (3 pts a serving)
and the ingredient list. Lundberg is a company I LOVE to support because of their values ~ their brown rice and Brown Rice Chips Rock….so, I knew the risotto was probably pretty tasty too.
I followed the direction on the box and it turned out perfectly!!! Cheesy good even though there really isn’t much broccoli taste or broccoli in there.
For our side, I whipped up a batch of Parmesan Zucchini for 1 pt ~ so easy and tasty.
All together, dinner was “almost” complete.
My BBQ chicken needed a little sauciness so I added some Annie’s Organic Ketchup ~ YUM! I do think Sriracha Hot Sauce would’ve been good too.
My heart has been super heavy with all the stuff going on in Haiti. It is SO CRAZY to me to think that we were just there,on THAT island when we visited SAMANA in the Dominican Republic in November. It was such a humbling experience when we visited it, I can only imagine what the devastation must be like now.
There are so many AMAZING people out there giving support, I am in awe of their generosity. That being said, be sure to CHECK OUT them all out and leave a comment ~ that’s all your have to do to help the people out in Haiti….they have the BIGGEST HEARTS in the world and I support everything they are doing!
