Happy Friday Eve all! This has been such a whirl wind week, but, I am super proud to say I’ve stuck to the plan. I’ve gotten up early 3 days this week to get in my workouts, stuck to mainly Simply Filling Foods and kinda, sorta used more of my WPA for non-Simply Filling Foods than I wanted to, but, I’ve counted it all. I think I am a total WPA horder when it comes to Simply Filling….I don’t want to waste a single one, yet, I want to keep them all week long LOL.
I honestly think that is one of the biggest successes is to track everything you eat even if things do not go as planned.
This morning on my way out the door, I whipped up an Oatmeal Protein Pancake and topped with 1/2 Tbsp Whipped Butter, 1 Tbsp Pure Maple Syrup, banana “chips” and a sprinkle of unsweetened coconut. (2 WPA for SF), 10 points+ for the entire pancake with toppings.

Yup, I totally found the biggest iced coffee container I had in the cupboard to make up a homemade Dirty Coconut Coffee with breakfast. I like the coffee but definitely think it’s more chocolately than coconutty.
Since I had to share my Two Bean Salad with The Husband, I was all out of pre-made lunches for the week. After browsing the fridge/freezer, I went with what we had on hand.
I made a Morning Star Veggie Burger Salad topped with 1 Tbsp sunflower seeds and 1 Tbsp Trader Joe’s Low-Fat Spicy Peanut Vinaigrette. (2 WPA – SF). 5 points+
I added a lite string cheese with watermelon for dessert.
On my commute home, I thought I wouldn’t need an afternoon snack. About half way through I was starving so I snacked on a hard boiled egg (SF) ~ 2 points+
It’s been awhile since I have given a garden update so I thought I’d do one for those who asked.
This year I only seem to be able to grow two things really…..

I actually have been thinking that I did something wrong with The Husband’s corn because it stopped growing so tall.
I actually thought it went to see when I saw these “seeds” on top ~ it’s what my cilantro and parsley did.
But, then, we looked closer and I heard The Husband say HI CORN!!!! Seriously ~ he is so corny.
We have 8 corn stalks coming in – yeah!!! I hope it’s good lol
We finally restocked at the Farmer’s Market today too. There are total advantages to going to the market during the last hour. Everything was cheap ~ super cheap.
- $1 a pound for varieties of cherry tomatoes & regular tomatoes – we bought 3 lbs
- $1 a pound for pluots, plums, nectarines, peaches, plurines – we bought 8 lbs
- Watermelon for $5
Yup, our total Farmer’s Market hall weighed more than we actually paid – love that!
We had planned on visiting the Curbside Grill Truck, but, he wasn’t there today. So, instead of cooking, we headed over to Chiptole where I built one fantastic Salad Bowl!
You can determine the points+ of anything you put in your bowl by visiting Chipotlefan.com. My entire bowl is 8 points+. I may or may not have stole a couple of The Husband’s chips with guacamole.
I count this bowl as Simply Filling because everything in it ~ is!
- romaine
- fajita veggies
- chicken
- 2 types of salsa ~ corn & pico de gallo
- I skipped the cheese, beans and rice because I didn’t “need” them
I am off to relax with The Husband and get ready to check the last day before the weekend off my list.
STATS for today (12 am – 8 pm)
- 2,394 calories burned (yesterday – 2,913!)
- 7,076 steps taken (yesterday 13,265!)
- 4 WPA used, 0 WPA remaining (26 daily points+)

Danica, I couldn’t agree more: track EVERYTHING! I am getting ready to start SF for the month of August…wish me luck 🙂 I also recently bought an Eat Smart scale and am just now setting it up…PLUS I’ve changed my weigh-in day to Sunday from Friday in hopes that I can get these week-end “eating outs” under control 🙂 It’s a plan! Your watermelon always looks soooo good! I never have good luck picking it out or storing it. Do you cut yours up and store or when you’re ready for it? Mine gets so watery so fast. I have to admit, I don’t know how to pick one out anyway..lol.

I am not sure how much of this is true or not but, we have a vendor at one of the local farmer’s markets that told me this is how you pick a good watermelon.
Look for one with the dotted, brown sugar spot lines, that has a yellow spot (meaning it rippened on the vine) and that is heavy for it’s size (meaning it’s juicy).
Yes, I do cut up a big watermelon at the beginning of almost every week. To keep it from getting too watery, I drain the juice out of the big bowl I store it in every time I scoop it out.

Have you been to Panda Express, since being on Simply Filling?

I have not been to Panda, but, today, I went to Chinese food and modified it to make it Simply Filling. I think Panda would be more challenging because they add corn starch to their stir fries. That being said, they may be able to steam it and put the sauce on the side. Get mixed veggies instead of rice and you are good to go.
Another option, pick 2 chicken dishes like string bean chicken and mushroom chicken with mixed veggies and count the points+ towards your WPA (about 7-8).
