Flapjacks, My Weekly Menu & a House Update

Happy Sunday All!  I LOVED reading all your replies on my last post.  I think it’s safe to say that EVERYONE LOVES cutting their sandwiches diagonally, but, I am now intrigued to try triangles and squares too.

Today was insanely productive but in such a good way.  It all started off with my Weight Watcher’s meeting and losing .4 lbs which I will 100% take because this is the one week each month I usually maintain or have a slight gain.

When I got home, I decided to bust out the BEST FLAPJACK Mix in Salt Lake City recommended by Janetha at Meals and Moves ~ Kodiak Cakes.

I LOVE the ingredient list and that they use “oat flour” which I use in every pancake I make.

2 pancakes for 4 points+ is pretty darn good too!

I LOVE how fluffy they get when you grill them and that my pancake hating Husband LOVED them so much he ate 4.

I made up 1 cup of batter and made 6 pancakes out of it.  I had TWO pancakes topped with 1 Tbsp PURE Maple Syrup, unsweetened coconut flakes and a banana (5 Points+)

I am actually surprised that the pancakes kept me full for 4 hours without any added protein.  I spent the morning doing laundry, straighten up our house as much as you can while it’s under construction and planning meals for the week.

Lunch today involved a little Panda Express and a whole lot of fiber goodness!

Broccoli Beef!  I put my entire meal into their Build a Meal and it came up to 13 points+! AWESOME!! I think that’s A LOT of Chinese food for the points+ and I probably checked off my 5 a day Veggies LOL Open-mouthed smile

As I mentioned to you all last week, we are remodeling our living room.  The Husband doesn’t want me to show you everything yet, but, here a few pictures of what he has accomplished this week.

He tore out all of our old sheet rock and insulation.

Meet “Snow White” LOL

This afternoon I helped him dig out our old hard wood floors….I definitely earned my activity points.

After we made a trip to the dumps where I earned MORE activity points, I planned out our meals and headed to the grocery store.

I know, I know….I stocked up and bought all this great food for the recipes below, but, when it came down to it, I wasn’t sure hungry and I had NO ENERGY to cook.   Sometimes you just have to channel your inner snacker cracker and have a dinner like this.

I discovered these Trader Joe’s Social Snacker Crackers and Cheese Squares this Christmas and pretty much became addicted.

3 points+ for 8 cracker’s isn’t too bad when you are eating a buttery, crispy, melt in your mouth sociable!

I am pretty darn excited to tell you that these BIG SQUARES are only 1 points+ a slice! Open-mouthed smile

I think I could “almost” sustain on cheese and crackers!  6 points+ and worth every one.

    I made banana flapjacks with the same mix yesterday. Our kitchens and stomachs must have been talking! 😉

    I need to start making a menu for the week. It makes life so much easier. I think I am going to cave on this pancake mix. Where did you find yours? I stink at making pancakes and they never taste how I want them to taste. I need a re-invention on my pancake failures.

    Mmmm…those pancakes look so good, I can almost taste them!
    I did make a meal plan this week (first time in a long time!). I’m just getting back to clean eating, and I’m trying to think of things to make that my husband will eat, so meal planning is a must! I think his favorite on my list will be Clean Eating Chicken Parmesan.
    Just a guess:-).

    Kodiak is the only mix I ever use! (stupid autocorrect wanted to call it Modish or Josiah – errr) It’s also great with half a scoop of protein powder or pumpkin mixed in. I even mixed in cranberry sauce after Thanksgiving.

    Those chicken dishes sound awesome. We’re gonna get snow this week so it’s cozy casserole weather!

    So cool that Jay is handy! Sean is the complete opposite. lol I don’t think I could portion out those crackers as well as you did. I have issues. :-/

    I ate lunch at Panda Express last week for the first time…I had a great meal for 9 p+!! and it included two spring rolls. WHY isn’t Panda Express listed in the WW dining out guide, is what I want to know??!! lol

    Dry wall dust…eeeks. The only thing worse than that is concrete dust! lol

    I LOVE that pancake mix. I found it once at Big Lots here and I was estatic! I bought all they had. I make DBF waffles for his daily breakfasts and freeze them in large batches.

    We are having DIY pizzas
    Chicken chili and cornbread
    chicken fajitas
    pasta toss

    Not sure about the weekend since I don’t know if we’ll be in town

    Ok…first off…do you rent your husband out….now we are talking FOR THE MONTH…none of this hourly, or daily stuff!!!! Wowie…how great is he!!!!

    My daughter and I ventured out to find the local Trader Joe’s last Friday. Today is Monday and we HAD to take the 10 mile ride again. I called ahead so they would hold l0 of the spicy peanut vinaigrette bottles(they only had 1 on Friday and my daughter thought it would be best left at her house) and we had to get 3 more of the dip spinach & artichoke…sooo good. Yes…yes…we do share with friends and neighbors. Even had to buy another Trader Joe’s bag…to send to my friend in NJ.
    Thank you so much for introducing us to this grand store. Hey, the week just started so who knows when we will have to take another fast drive.(Have you tried the lite cheddar snack sticks…yummmmy.

    ok here is our week of dinners!

    Trying that white bean turkey chili but gonna jazz it up spicey! Mon.
    Tues. its TJ’s orange chicken (baked) pot stickers, and rice (white for them brown for me!)
    Wed.Gina’s minastrone soup with bread
    Thursday: Your chicken Tetrezz (spelled some how!)
    Friday:Taco night
    Sat: me its soup n salad kids have whatever on Sat hubby is gone every sat doing a double!

    Ha ha, Danica – my house looks just like yours!! Only difference, maybe, is that my huband started our project about 2 years ago…I’ll have to send you pictures…you will laugh at the similarities!!

    Congrats on the weight loss…with all that activity, you are sure to double or triple that next week!!

    I found my mix at my local grocery store, Raley’s. You could probably go to their website http://www.kodiakcakes.com to find a store near you that sells them.
