Low-Fat Lasagna Cups & My Weekly Menu

Happy Sunday all! Do you all have sayings at your house for what you call “certain foods”?  We do around here because The Husband does not like

I woke up this morning craving Flapjacks!  Not just any ole Flap Jacks, but, my absolute FAVORITE box mix around ~ Kodiak Cakes.

That actually says a lot, because, I am sort of a “snob” when it comes to my flap jacks.  It is SO EASY to make them from scratch & well everything tastes better when it’s homemade…..or almost everything Open-mouthed smile

I had TWO flapjacks topped with 1 tsp whipped butter & 1 Tbsp Pure Maple Syrup (6 points+).

Plus a “Maple” drizzled Morning Star Veggie sausage for staying power (2 points+)

One of my BIGGEST tips for SUCCESS is that if you are going to bake something irresistible like Sea Salted Almond Chocolate Covered Toffee, do it early in the morning!

If you are anything like me, it does NOT sound good in the morning.  Ask me in the afternoon & that is another story Open-mouthed smile

Since I spent the weekend stocking up our fridge, lunch only took minutes to “make”. It’s pretty much the same thing I had yesterday too ~ it’s really THAT good Winking smile

Grilled Trader Joe’s Sweet Maple Apple Chicken Sausage (3 points+).

More Harvest Grain Salad (4 points+)

Veggie tray veggies dipped in Trader Joe’s Caramelized Onion Dip (1 points+)

Snack time served with Iced Coffee!

Whenever I get my hands on these New Hong Kong Won Tons, I can’t wait to find new ways to use them all up.

As I was pondering ideas for won ton ravioli’s I saw several ideas only using the won ton wrappers for Lasagna.

I fell IN LOVE with the idea of having little individual, portion controlled Lasagna Cups since I have a thing for “all things MINI”

You could take the easy route or the homemade route for making these.

All you need is a little cheese……(I may or may not have used 3 types of cheese)

Plus more cheese (I loaded mine with 5 types of veggies & fresh herbs!)

Jarred or homemade sauce…

Then, you just layer it up all over again……

Finishing with cheese on top!

Pop them in the oven and dinner is ready in 25 minutes (fi you can wait that long).

I still have to calculate the stats, but, I am positive that each cup is 4 points+ or less…….

~ I have so many new ideas I want to try ~ it was tough to pick just 5 LOL

*Caprese Pesto BLT’s!!!

* Mushroom Haystack Fettuccine ~ Lightened Up

* Gigantic Stuffed Zucchini

* French Onion Soup topped with homemade croutons & real deal Swiss Cheese!

* Ceviche, Grilled Steak w/Green Beans & Mushrooms or BBQ Pork Chops, Sweet Potato Fries & salad or tacos Open-mouthed smile

    Hey Danica, love your blog!! My favorite part is watching what you bring to work/make for lunch. That seems to be a very hard thing for me (especially cause I work in SF… where delicious lunch spots tempt me around every corner!!). But back to you! I would love to see a post sometime about how you prep/plan for lunches. Do you cut all your fruit on Sunday night and dish out for the week? Do make large batches of salads and bring the whole batch to the office to dish out over the week or do you spontaneously pull it together each morning? Lvoe your creative and delicous lunches – and would love to hear more about them! Thanks!

      Hi Alison,

      Thanks for the suggestion ~ that is such a great idea. I usually cut up all my fruit at once ~ either after I visit the Farmer’s Market on Thursday or Saturday or I do it on Sunday. I know if it isn’t cut up (watermelon, cantaloupe, pineapple), I won’t eat it. It also helps to have a lot of choices on hand so I am not afraid to stock up on my fruits. I sometimes will prepare lunches for the week and eat the same thing all week long. I will cook that up on Sunday and just grab/go. Other times I make leftovers on purpose – making extra at dinner so I can have it the next day. I usually will put the leftovers in a single serving container making it easy to grab and go. If I have nothing planned, I usually try to think of what I want/plan out my day the night before so it makes grabbing and going easier in the morning.

      I hope that helps a little. I am definitely adding your idea to my need to post about list 🙂

    The lasagna cups look so good- definitely adding it to my “to-make” list 😀 I’ve never cooked with wonton wrappers but this recipe and the sweet feta stuffed wontons are gonna be my firsts!

    What a fantastic idea with the lasagna cups. I have a package of whole wheat pasta sheets in the freezer and have been wondering what to do with them. Bet they would work great with your lasagna cups idea! Can’t wait to try it.
