Happy Sunday all! I had no idea that so many of you have tried The Better Chip, chips…I think that just means I need to get out more and try new chips lol. Last night I decided to try a new recipe out that I have been brainstorming for a few weeks now ~ Pineapple Coconut Mini Muffins.
I knew I wanted to use my 2% Chobani Pineapple Greek Yogurt with crushed pineapple for sweetness and moisture, then, a little coconut flour plus unsweetened coconut for the nuttiness (to save on points+ over the sweetened). I had no idea the combination would result in one of the most delicious yellow cake batter flavors ever….I still want to “tweak” the recipe a bit – maybe more pineapple or trying out brown sugar, but, I will be posting the recipe soon.
The stats are pretty awesome so far ~ 2 for 3 points+ but I may try to get them down to 1 points+ each.
I lost another pound at weigh in this week bringing my Simply Filling total to 7.4 lbs! I think the part that is even more exciting is my leader showing me today that I’ve had a loss every single week since July 1st – SUCCESS!
I had 2 mini muffins at the meeting (SF+3 WPA) along with a banana and pluot. The Husband had the nectarine. I did buy a Venti Iced Nonfat Latte but left it in the car when we went to walk the coin show and Sacramento Antique Fair….I was so sad when I realized it
After walking a billion miles, we headed over to La Bou for salads but, they had closed for lunch already. The Husband then asked me to take him to Steamer’s Coffee and Tea Exchange just so he could try the Chicken Avocado Cobb Salad I always rave about.
There are several Simply Filling Items on their menu that you can order, but, I had their Cobb Salad on my mind and nothing could change it – WPA and all. I totally blame the AVOCADO ranch dressing for my addiction
I modify their turkey cobb to add chicken and swap the stinky cheese for low-fat swiss. I am pretty sure the Cashier’s are Not Fans on Facebook when I do this, but, it really turns this salad from OK to absolutely amazing.
Romaine, chicken, chopped egg, avocado, bacon, tomato, swiss, avocado dressing

After lunch, we came home, relaxed a little and headed out to meet some friends to kick off The Husband’s Birthday Week Celebration at Buckhorn Steakhouse. His actual birthday isn’t until Thursday, but, we are celebrating all month week long.
He picked this place just so we could share the Yolo BBQ Sunday Special ~ Family Style~BBQ Special Platter ~ It all comes out on this HUGE platter ~ Holy, Huge BBQ!
Are you all ready for this?! This platter actually serves 5+ people ~ Here is what it included with the breakdown ~ for the record, it’s not really Simply Filling Friendly at all, but, you could easily order a filet with plain baked potato & salad off their regular menu to be right on the Simply Filling Track.
- Melt in your mouth Char Roasted sirloin. Simply Filling or 3 oz = 5 points+.
- Smoked, Herb Roasted Chicken Simply Filling or 1 oz = 1 points+
- St. Louis Style Ribs ~ the meat fell off the bone ~ sweet, tangy & tasty! 1 rib for 5 points+
- Smoked Sausage ~ 1 oz = 3 points+
- French Fries ~ 10 fries = 6 points+
- Sweet, smoky, maple baked beans. 1/4 cup = 2 points+
- Broccoli BACON salad 1/2 cup = 4 points+
- BACON Macaroni & Cheese! 1/4 cup = 5 points+.
- Corn muffin = 4 points+
Here was my plate and aside from a small scoop of mac n cheese and another bite of broccoli salad, I stuck to this only eating half my corn muffin. (SF+25 WPA)
The funny thing about eating Simply Filling ~ when you have a totally rich, non-Simply Filling Meal like this your body let’s you know….I am still SO FULL even after 2 hours and a long evening walk. I can’t wait to get back to healthy eats tomorrow ~ just let me survive the dining out Birthday celebrations lol….I will be doing a lot of running this week for sure!

- 2,575 calories burned
- 8,399 steps taken
- 33 WPA used, 16 WPA remaining (44 daily points+) ~ and I totally feel like I ate that many!

Congrats on the weigh in! The BBQ looked amazing! Have you ever had brisket tacos?They are my all time fave and sadly I have only found them in TX which makes this now Virginian pretty sad. Although I so understand about what you mean when you eat foods outside of the norm. I had a patty melt and some onion rings as a splurge the other day and my body was so so full. It was like it was telling me what in the world did you just eat and why?

You’ll laugh at this Danica – I saw my grocery store flyer had pork stew meat on sale for $1.99 and I did a quick google search to see what I could make with it – only to find one of my recipes I forgot I even made – so I remade a thai pork stew – I am reposting the recipe tomorrow – it got two BIG thumbs up with my co-workers.
But now I just want some ribs!
